As someone who frequently struggles with the “nothing sounds good”, “I don’t feel like cooking”, or “i’m too busy for breakfast” conundrums, i’ve found that batch cooking and meal prepping makes my life a whole lot easier! Freezer meal prep is my favorite – doing a bit of extra meal prep when you have time to stock your freezer for a busy week/season ahead. Simply stocking your freezer with portioned meals that you can just grab-reheat-and-go! Not only are they a yummy high protein breakfast option, but they’re great for lunch or dinner too, who’s judging 😉

I love prepping these breakfast burritos in advance and freezing them—they’re perfect for a quick, high protein, and satisfying meal (that’s a must!). I kept mine pretty basic with scrambled eggs, sautéed peppers and onions, and chicken sausage crumbles. But the beauty of this recipe is how versatile it is! You can easily make them vegetarian by leaving out the chicken crumbles, or switch things up with ingredients like turkey bacon, creamy avocado, jalapeños for a kick, pickled red onions, spinach, beans, dairy-free or dairy cheese, salsa, or your favorite sauces!

The full recipe is in the recipe card at the bottom of the post! These ingredients are super customizable so you can use veggies you love, prepare the potatoes in different ways, etc. But here’s an overview of what I use!

  • Ground chicken – homemade chicken sausage crumbles are a great way to easily up the protein content of the burritos while also adding lots of flavor! Instead of using regular sausages, we simply combine ground chicken with spices and seasonings to create a sausage flavor!
  • Tortillas – use whatever fits your dietary needs! Hero tortillas are a great low carb option & Siete makes amazing grain-free and paleo options!
  • Veggies – onion, bell pepper, and greens are my go-to’s!
  • Potatoes – frozen hash browns, roasted potatoes, whatever your jam is! I find using frozen hash browns super easy and they don’t take up a ton of space in the burrito!

Chicken sausage crumbles

Were keeping things super easy and simply cooking ground chicken with a bunch of yummy spices. Simply break apart the chicken in a pan, add the seasonings, and cook until cooked through. Then we’ll set this aside while we prepare the fillings.

Prep the potatoes

The process in this step depends on what type of potatoes you’re using. Frozen hash browns? Simply air fry or heat until crispy. Cooking potatoes from scratch? Simply cube them, toss in oil and seasoning, then bake or air-fry until crispy.

Preparing the filling

In a pan with a drizzle of oil, add the peppers and onion. Cook a few minutes until the veggies have softened. Toss in the arugula and cook a minute or so longer until slightly wilted.

Assembling the burritos

Simply add some veggies, potatoes, chicken sausage crumbles, and eggs to the tortilla. Roll it up tight, then wrap in parchment paper. Store in an air-tight baggy in the freezer.

If you don’t want to use plastic baggies, you can wrap the burritos in parchment paper and then wrap again in this beeswax wrap!

How to reheat frozen breakfast burritos

From frozen: remove parchment paper. Microwave for 60-90 seconds or until heated through. OR, from thawed: Set in refrigerator to thaw for 24 hours. Reheat in the microwave for a minute or so until heated through or bake in the oven at 350F for 15-20 minutes. You can also pop them in the air fryer at 350F to reheat! Just check on it every few minutes.

Variations

  • Low carb breakfast burritos – use a low carb tortilla or wrap like Hero bread or Siete.
  • Vegan breakfast burritos – swap in tofu scramble for eggs and use dairy-free cheese.
  • Vegetarian breakfast burritos – Simply leave out the chicken sausage!

Ingredients
  

Turkey/Chicken Sausage Crumbles (this will make extra!)

  • 1 16oz package ground chicken or turkey
  • 1 1/2 tsp sea salt
  • tsp pepper
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp dried sage
  • 1/4 tsp dried thyme
  • 1 tsp red pepper flakes (optional)

Scrambled eggs

  • 1/2 tbsp olive oil or spray oil
  • 12 eggs, whisked
  • sea salt & pepper, to taste

Veggies

  • 1 tbsp olive oil or spray oil
  • 1 small red onion, diced small
  • 2 bell peppers, diced
  • big handful of greens of choice (spinach, arugula)

For assembling the burritos

  • Tortillas, of choice
  • dairy or non-dairy cheese (optional)

For serving

  • salsa, hot sauce, avocado, etc.

Instructions
 

Prepare the potatoes

  • I prefer to use frozen hash browns (with just potatoes & salt as ingredients). I simply air fry them until crispy. However, you can roast diced red or gold potatoes, etc. Prepare your potatoes however you'd like (just be sure to dice them small and cook until crisp!).

Sausage crumbles

  • In a large bowl, combine the ground meat and spices. Toss well until the spices are evenly distributed throughout the meat – just be careful not to squish the meat too much or it'll get mealy.
  • Heat a skillet to medium heat with a drizzle of olive oil or spray oil. Add the meat and cook, breaking it up with a spatula until it's crumbly and coated with caramelized edges – this usually takes about 20 minutes.

Veggies + eggs

  • While your meat is cooking, heat another pan over medium heat and add a drizzle of olive oil or spray oil.
  • Add the diced onion and bell pepper. Sprinkle over a pinch of salt. Cook a few minutes until the veggies have softened. Then add in the greens. Cook another minute or so until they've cooked down a bit. Remove the veggies to a bowl or plate.
  • In the same pan, cook the eggs. Start by adding the eggs to a mixing bowl with the seasonings. Whisk well. Add some spray oil or olive oil to your pan and add the eggs. Scramble them until cooked through. Then remove from heat.

Assemble the burritos

  • Lay out a tortilla. Add some of the cooked veggies, potatoes, sausage crumbles, and eggs. You can sprinkle over cheese if you'd like. Then, wrap them up tightly, then wrap in parchment paper. Store in an air-tight baggy in the freezer. Serve with a side of hot sauce, salsa, avocado or guacamole, etc.
  • Store leftover chicken sausage crumbles in an air-tight container in the fridge. You can use these in tacos, on salads, etc!
