Okay, if you eat a gluten-free diet, i’m sure you know it is HARD out here when trying to find good gluten-free wraps/tortillas that don’t cost a million dollars and don’t rip anytime you handle them. These healthy spinach wraps have been one of my go-to healthy breakfast and/or lunches and they couldn’t be easier to make!

What’s the texture of these spinach wraps like?
The texture of these wraps aren’t like a typical tortilla. They will come out fluffier/softer, but are delicious and pliable! They wrap great, without ripping or splitting. You can also place your wrap in the air fryer or heat on a pan after filling it, to toast it up a bit!
How to make healthy spinach wraps

- Blender

ingredients
- Spinach: Fresh spinach adds tons of nutrients to this wrap while also creating the most vibrant green color!
- Seasonings & spices: Salt, pepper, garlic powder, nutritional yeast, dried oregano or basil, etc.
- Eggs: Two eggs are used to make these wraps! They are packed with protein, healthy fats, and important nutrients like Choline!
steps to make spinach wraps
- Blend: Add all ingredients to a blender, blending until smooth.
- Heat the pan: Heat the pan over medium heat. Use a little spray oil or coconut oil to thinly coat the bottom of the pan. You can make one large wrap or two smaller wraps. Slowly pour the spinach mixture into the pan, letting it spread out into a thin circle. Make sure there are no holes/it’s not too thin, or it’ll be hard to flip.
- Flip! Once it’s bubbling, carefully flip the tortilla over to allow it to cook a few minutes on the other side. If you don’t have a non stick pan, use the baking method in the recipe card below!
- Stuff! Stuff the tortilla with your favorite breakfast burrito fillings, sandwich fix-ins, etc! These are great for sandwich pinwheel roll-ups as well!
How to use healthy spinach wraps
- Fill with your favorite sandwich fillings (turkey, deli meats, sliced tofu, tomato, lettuce, mayo or hummus, etc.)
- Use as a breakfast wrap and fill with egg whites, fresh tomato, etc.
- Make a caesar wrap! Add caesar salad with chicken and wrap it up!
- Have fun with it – these work great anywhere you’d use a wrap.

Healthy Spinach Wraps/Tortillas (Gluten-free, Paleo, Keto)
Ingredients
- 1 cup packed spinach
- 2 eggs
- 1 1/2 tsp nutritional yeast *optional. Gives a cheesy flavor!
- Good pinch salt & pepper
- 1/4 tsp garlic powder
- dried herbs & seasonings of choice
Instructions
- Note: if you do not have a good non-stick pan, use the baking method or your wrap may end up like scrambled eggs!
Pan method
- Add all ingredients to a blender, blending until smooth.
- Heat your non-stick pan over medium heat. Use a little spray oil or coconut oil to thinly coat the bottom of the pan. You can make one large wrap or two smaller wraps.
- Once hot, slowly pour the spinach mixture into the pan, letting it spread out into a thin circle. Make sure there are no holes/it's not too thin, or it'll be hard to flip. After 3 minutes or so, carefully flip the wrap over, allowing it to cook another 3-4 minutes (if yours doesn't seem done, cook a minute or two longer!)
- Let the wrap cool for a few minutes, then stuff the tortilla with your favorite breakfast burrito fillings, sandwich fix-ins, etc! These are great for sandwich pinwheel roll-ups as well!
baking method
- Follow the steps above to blend the ingredients together. Preheat your oven to 350F.
- Line a baking sheet with parchment paper, then grease it with a little drizzle of oil or avocado oil spray.
- Pour the mixture slowly onto the pan. It's okay if it's not a perfect circle! You can also spread it out a bit to form a rectangle wrap. Bake in the oven for 8 minutes, then remove.
- Let the wrap cool for a bit, until it no longer looks wet. Then use!
Didn’t see your tip to use a truly non stick pan until the second time I tried these – it made the biggest difference! So much easier! I’ll be making these all the time now!
