I’ll be honest with you guys, I have always been intimidated by meat. I have a few recipes I use on rotation and don’t venture out too much. However, once I started actually using my slow cooker, everything changed – I remember my dad always making Tri Tip in his slow cooker and totally get the hype now! Crock pots are known for creating the most tender meat, but I was truly shocked at how amazing and easy it really was. Once you start slow cooking meat, you won’t look back!
This recipe is a great starting point. You get tender, moist, flavorful, cozy tri tip meat without any effort. You literally just season the meat, chuck it into the crock pot, and let it work it’s magic. It’s quickly become one of our favorite recipes.

Ingredients You’ll Need
Here’s what makes the magic happen (hint: it’s lots of herbs & seasonings!)
- Beef Tri Tip – Highly recommend using grass-fed and finished meat! The flavor and nutrient profile are much better!
- Seasonings: sea salt, pepper, onion powder, smoked paprika
- Herbs: dried thyme, rosemary, oregano
- Bone broth or veggie broth – bone broth adds extra protein and gut-healing benefits, but veggie stock works just as great!
- Garlic cloves – fresh garlic adds an incredible flavor and antimicrobial properties!
- Worcestershire sauce – don’t skip this! It makes a huge difference!
How to Make Slow Cooker Tri Tip
- Season the Tri Tip: Start by patting your tri tip dry, then rub it generously with salt, pepper, and all your dried herbs and spices. Don’t be shy!
- Add the Aromatics: Place the roast in your slow cooker and scatter the minced garlic, fresh rosemary, and thyme around it.
- Pour in the broth: Add the bone broth and Worcestershire sauce. This savory liquid keeps the meat juicy and creates the most delicious broth.
- Set It and Forget It: Cover and cook on low for 8 hours or high for 4–5 hours, until the beef is fork-tender and shreds easily.
- Shred and Serve: Remove the roast, shred it with two forks, then spoon some of that rich broth over top to keep it moist and flavorful.

- Use fresh herbs: They make a big difference in aroma and taste. For instance, fresh garlic will add more flavor than garlic powder.

- Store: Store shredded beef in a food storage bag in the fridge and enjoy within 4 days.
- Freeze: If you cannot eat the entire dish in a few days, freeze it for up to three months.
- Thaw: Place frozen leftovers in the fridge to thaw overnight before serving.
- Reheat: Reheat shredded meat by placing in a microwave-safe dish and heat it in the microwave for one to two minutes. Alternatively, you can heat in a pan on the stove top!

Slow Cooker Tri Tip
Ingredients
- 3ish lb beef tri tip (it's okay if it's slightly less or more!)
- 2 cups bone broth or veggie broth
- 2 tbsp Worcestershire sauce *I use Organic Portland brand!
- 1/2 tsp each, dried thyme & rosemary
- 1 tsp red pepper flakes (optional)
- 1 tsp onion powder
- 4 garlic cloves, minced
- 1 tsp sea salt
- 1/2 tsp pepper
Instructions
- Season the Tri Tip: Start by patting your tri tip dry, then rub it generously with salt, pepper, and all your dried herbs and spices.
- Add the Aromatics & broth: Place the roast in your slow cooker and scatter the minced garlic (You can also add some fresh sprigs of rosemary, and thyme around it). Add the bone broth and Worcestershire sauce – I like to pour the broth and Worcestershire around the meat rather than on top of it – don't want to wash the spices off!
- Set It and Forget It: Cover and cook on low for 8 hours or high for 4–5 hours, until the beef is fork-tender and shreds easily.
- Shred and Serve: Remove the roast, shred it with two forks, then spoon some of that rich broth over top to keep it moist and flavorful.

- Store: How you store leftover tri-tip roast depends on how you are serving it. If you are serving it in slices, place it in an airtight container. For shredded meat, I prefer to keep it in a food storage bag. Either way, keep it refrigerated and eat it within four days.
