Thick and creamy, cozy Pumpkin Spice Latte Chia Pudding is the perfect healthy breakfast or meal prep for fall! Packed with protein and fiber, you’ll be full all morning long while curbing that pumpkin spice craving!

Call me basic, but my ideal fall morning is starting my day with a pumpkin spice latte. Piping hot, frothy, spicy. But, obviously we need breakfast first 😉 So if your fall mornings revolve around a pumpkin spice latte, this is the version that actually keeps you full until lunch. The base is a thick, creamy pumpkin chia pudding blended with Greek yogurt, almond butter, and protein powder, then crowned with a cloud of whipped coffee that gives it the unmistakable “latte” finish. It’s high in protein, gluten-free, and easy to make vegan, and since it keeps beautifully in the fridge, it’s an ideal meal prep breakfast you can make on Sunday and eat all week!
Why You’ll Love This Recipe
- Tastes like your favorite fall coffee order. Pumpkin, warm spices, and a whipped coffee topping bring the latte flavor without the sugar-heavy café price tag.
- High protein. Greek yogurt, protein powder, almond butter, and chia seeds all contribute, so one jar works as a real breakfast, not just a snack.
- Meal prep friendly. The pudding holds up for days in the fridge, and the topping takes about 3 minutes to whip fresh.
- Easy to adapt. Swap in coconut yogurt, plant-based protein, and plant milk and it’s fully vegan. It’s gluten-free as written.

Ingredients you’ll need
- Chia seeds: The base that gives the pudding its thick, spoonable texture. Whole chia seeds work best here. These are the cheapest i’ve found per ounce!
- Greek yogurt: Adds creaminess and protein. Use plain, unsweetened Greek yogurt, or a thick coconut yogurt for a vegan version.
- Almond butter: Smooth and unsweetened blends in best and adds richness. Cashew or sunflower seed butter work if you need a swap. I can’t recommend the snickerdoodle or pumpkin spice flavors by Ground Up, enough! They make it extra delicious! You can use my code “DANI10” to save!
- Protein powder: Optional! A vanilla or unflavored protein powder works well. Whey and casein blends tend to thicken more than plant proteins, so you may need an extra splash of milk.
- Pumpkin puree: Make sure it’s 100% pure pumpkin, not pumpkin pie filling, which contains added sugar and spices.
- Instant coffee: Required for the whipped topping. Regular brewed coffee or ground coffee will not whip.
- Sweetener: I love the flavor of maple syrup with this chia pudding recipe, but honey or monk fruit also work!
Steps to make pumpkin Spice Latte chia seed pudding
Tips for Success
- Stir twice. Whisking the chia mixture once at the start and again after 10 minutes is what keeps the pudding from setting in clumps.
- Use an electric frother for the whipped coffee. You can whisk by hand, but it takes a lot of arm work and sometimes doesn’t yield the same results.
- Use instant coffee, not brewed. The whipped topping only works with instant coffee granules or instant espresso powder.
- Adjust the thickness. If it’s too thick after chilling, stir in a splash of milk. If it’s too loose, add another tablespoon of chia and give it another hour.

How to meal prep & store pumpkin spice latte chia pudding
Store the pudding in covered jars in the refrigerator for up to 5 days (I like these jars because it gives you lots of room to add extra milk and mix them up if needed or to add toppings!) Make the whipped coffee the morning you’re eating the chia pudding, since it deflates within a few hours!
FAQ
- Is this pumpkin spice chia pudding vegan? It can be! Use coconut or another plant-based yogurt, a vegan protein powder, and plant milk. Everything else is already plant-based.
- Is it gluten-free? Yes, as written!
- How much protein is in each serving? It varies by yogurt and protein powder, but expect roughly 25-30g of protein per jar with whey protein and Greek yogurt, and slightly less with plant-based options. Run it through a nutrition calculator with your exact brands for accurate numbers!
- Can I make this without protein powder? Yes. Leave it out and add an extra 1/4 cup of Greek yogurt and another splash of milk. The protein will be lower, but the pudding will still be creamy and satisfying.
- Why isn’t my whipped coffee fluffing up? Usually it’s either regular coffee instead of instant, or too much water. Stick to equal parts instant coffee, sweetener, and hot water, and keep whipping a minute or two longer than you think you need.
