chia pudding
- 1/4 cup chia seeds
- 1/4 cup canned pumpkin puree
- 2 tbsp almond butter
- 1 cup milk, of choice
- 1/2 cup coconut yogurt, greek yogurt, OR full-fat canned coconut milk
- 1 scoop of your favorite vanilla or pumpkin spice protein powder *caramel is also great!
- 2-3 tbsp honey or maple syrup or monk fruit for sugar-free
- 1 tsp vanilla extract
- pinch of sea salt
- 2-2 1/2 tsp pumpkin spice *add more as you'd like!
whipped coffee (makes enough for one jar!)
- 1/2 tbsp instant coffee (MUST be instant coffee!)
- 1/2 tbsp hot water
- 1/2 tbsp honey or other sweetener of choice
In a large bowl, combine all of the chia seed pudding ingredients, whisking well until smooth and creamy. Taste & adjust as you'd like (more pumpkin spice, sweetener, etc.)
Divide the mixture amongst two jars.
The morning that you're going to eat the chia pudding, combine the instant coffee, hot water, and sweetener to a jar. Use an electric frother to froth it for a few minutes until it's fluffy and golden. (Note that the whipped coffee is concentrated and strong in flavor. It's meant to be stirred into the chia pudding!) If you don't like coffee, see the notes for my original pumpkin spice chia pudding recipe!
Add to the top of your chia pudding. Enjoy!
Adjust the thickness. If it’s too thick for your preference after chilling, stir in a splash of milk.
