I remember when I first tried these Organic Coconut Snacks from the Creative Snack Company and literally ran home to make my own homemade version! For awhile Costco also carried a version of these from the brand Inno Foods but I haven’t seen them in ages!
Regardless, they are sweet and salty bites of heaven while being packed with nutrient-dense seeds and coconut and naturally sweetened with maple syrup! Which makes them the perfect paleo, vegan, and gluten-free snack! Not to mention these literally couldn’t be easier to make! You will be HOOKED.

How to make coconut clusters

Equipment
- Silicone muffin pan or baking sheet
- Parchment paper (if using baking sheet)
- Mixing bowl & spatula
Ingredients
- Large coconut chips – Large raw, unsweetened coconut chips are the best type of coconut to use in this recipe. Be careful not to use already toasted coconut chips! I’ve found coconut chips to be cheapest at Trader Joes, however you can get them for a great price on Amazon as well!
- Sunflower seeds – Sunflower seeds are a good source of fiber, and they offer a diverse profile of vitamins and minerals, including vitamin E and magnesium.
- Pumpkin seeds – Pumpkin seeds (also known as pepitas) are just a small portion of a pumpkin’s make-up, but they’re big on flavor, and they’re an excellent source of protein and iron.
- Chia seeds – These super seeds pack an incredible 5,350mg of Omega-3s, 10g of fiber, and a powerful 5g of protein in each serving!
- Maple syrup – Maple syrup works as a great natural sweetener, while also adding an amazing flavor to the clusters. I have tested this recipe using honey and agave and the clusters seemed to fall apart easily, so i’d recommend sticking with 100% pure maple syrup for best results!
- Vanilla extract & sea salt (optional, but adds flavor!)
Instructions
- Preheat the oven to 350F. Grease a mini muffin pan with spray oil.
- In a small bowl, combine all of the ingredients, being sure to mix well so the maple syrup coats all of the coconut and seeds.
- Using a spoon or cookie scoop, scoop the seed mixture into the muffin pan, filling them to the top. I like to use the back of the spoon or scoop to pack them in tight so they don’t fall apart.
- Bake for 11-14 minutes until golden. Be careful not to over-bake – you don’t want the coconut to burn!
- Cool! Let cool for at least an hour and a half before trying to remove them from the pan.
how to store coconut clusters
Store your coconut clusters in an airtight container at room temperature for up to one week. A glass container will keep the clusters more crisp (I store mine in a wide mason jar!). Don’t store them in the fridge as it’ll cause the clusters to get soggy. However, I’ve enjoyed these straight from the freezer and loved! You can store them in the freezer in a freezer baggy or container for up to 3 months!

Ways to Enjoy healthy Coconut Clusters
- As a grab-and-go snack.
- Crumbled over yogurt or smoothie bowls.
- Mixed into granola or oatmeal.
- Use on top of ice cream.
- Paired with dark chocolate for an extra treat!
Expert tips
- Keep an eye on the clusters! Remove them from the oven as soon as they begin to turn golden brown, as they will burn quickly!
- To prevent crumbling – Stack/pack the mixture up into clusters on the baking sheet or in a silicone muffin pan. Don’t touch them until they are completely cooled, about 1-1 1/2 hours. The syrup firms them up!
- Remove them carefully from the parchment paper using a spatula.
Recipe variations – switch things up!
- Add a dash of cinnamon!
- Drizzle melted chocolate over the cooled clusters.
- Stir in dried goji berries, raisins, or finely chopped dates into the mix prior to baking!

Hi Tai! Yes! You can also use a standard size pan and just not fill them up all the way! Just be sure to pack them in real good so they stick together!

So I don’t share just because that information varies sooo widely depending on brands you use, etc. I also am careful to be mindful of those who struggle with their relationship with food/the numbers side of things, so I always just recommend plugging the recipe into my fitness pal with the brands you use. for the most accuruate macros!
I made these on a sheet pan and broke apart when cooled. They are delicious although I’m not a fan of chia seeds, I’ll try hemp seeds next.
