Ingredients You’ll Need
The beauty of these spring rolls is that you can customize the fillings based on your preferences. For the spring rolls, you’ll want:
- Rice paper wrappers
- Crunchy vegetables: bell pepper, shredded carrot, red cabbage, etc.
- Fresh herbs & greens: cilantro, mint, microgreens, green leaf lettuce
- Your favorite protein: cooked shrimp, chicken, air-fried tofu
- Cooked Rice noodles or vermicelli noodles (optional!)
- Avocado
How to Make Giant Spring Rolls
Step 1: Prep Your Fillings
Wash and chop all of your vegetables before assembling the spring rolls. I recommend cutting everything into thin strips so the vegetables are easy to roll and you get a little bit of everything in every bite. If you’re adding protein or rice noodles, have those prepared and cooled before assembling.
Step 2: Soften the Rice Paper
Fill a shallow dish or pan with warm water. Dip one rice paper wrapper into the water for just a few seconds, then remove it and place it on a clean, damp surface. Don’t wait for the wrapper to become completely soft in the water—it will continue softening as you assemble your roll.
Step 3: Add Your Fillings & roll!
Pile your vegetables, herbs, protein, and any other desired fillings toward the center of the wrapper. Don’t be shy with the fillings, but try not to overstuff it. You want to be able to tightly wrap everything without tearing the rice paper. Fold the bottom of the rice paper wrapper over the filling, then fold in the sides. Continue rolling tightly, just like you would a burrito. The rice paper will become sticky as it softens, helping everything stay together.
Step 5: Make the Harissa Peanut Sauce & serve!
Whisk all of the dipping sauce ingredients together until smooth and creamy. If the sauce is too thick, add a splash of water until it reaches your preferred dipping consistency. Slice your giant spring roll in half and serve with plenty of harissa peanut dipping sauce.
How to Roll Rice Paper Spring Rolls Without Tearing Them
Rice paper can take a little practice, but once you get the hang of it, it’s incredibly easy. The biggest mistake is soaking the wrapper for too long. You want it softened enough to bend but not completely limp.
A few other tips:
- Use warm rather than hot water.
- Don’t over-soak the rice paper.
- Place it on a damp surface or on parchment paper.
- Avoid overfilling your spring rolls.
- Roll gently but firmly.
- Don’t worry if your first roll isn’t perfect!
Tips for the Best Giant Spring Rolls
- Prep everything first. Rice paper waits for no one! Have all of your fillings chopped and ready before you start rolling.
- Don’t over-soak your rice paper. It should be pliable but still slightly firm when you remove it from the water.
- Don’t overstuff. Giant doesn’t have to mean impossible to roll. Leave enough room around the edges to fold everything over.
- Use contrasting textures. Crunchy carrots, cucumber, cabbage, and peppers make the spring rolls much more satisfying.
- Make extra sauce. Seriously.

Frequently Asked Questions
- Can I make giant spring rolls ahead of time or meal prep them?
Yes, although they’re best enjoyed fresh. If making them ahead, wrap each spring roll individually and refrigerate until ready to eat. Prep all of your fillings ahead of time and assemble the rolls when you’re ready to eat for the freshest texture. - How do I keep rice paper rolls from sticking together?
Keep them separated with parchment paper or another nonstick barrier. Avoid stacking them directly on top of one another. - Are rice paper rolls gluten-free?
Rice paper is naturally gluten-free, but always check the packaging of your individual ingredients if you need to strictly avoid gluten. - How spicy is the harissa peanut sauce?
That depends on the harissa you use. Start with a smaller amount and add more until it reaches your preferred spice level. - Can I make the peanut sauce without peanut butter?
Yes. Almond butter, cashew butter, or sunflower seed butter can be used instead.
