Although I could put regular salsa one everything, I feel like pickle salsa doesn’t feel as confined to just Mexican cuisine. It really adds a tangy zest to SO many different things and it’s super versatile.

What Is Dill Pickle Salsa?

Dill pickle salsa is a savory, tart, and just the slightest bit of spicy condiment made with dill pickles, fresh herbs, onions, jalapeños and tomatillos, and lime. The flavors blend together to create something magical – I can’t explain it, I just want everyone to try it!

This versatile salsa is perfect for summer BBQs, game-day snacks, and pickle-themed charcuterie boards. Its incredibly easy to make. I have a confession.. i’ve actually never purchased tomatillos before, but they were so incredibly easy to use – you just peel the outer layer off, wash, and use. They add SO much flavor to the recipe!

Ingredients for Dill Pickle Salsa

  • 16oz container dill pickles (choose crunchy, high-quality pickles); I HIGHLY recommend Grillo’s Pickles (not sponsored, just genuinely think they’re the best pickles, ever!). You’ll reserve 1/4 of the brine and drain the rest.
  • Yellow onion
  • 1 small jalapeño – feel free to add extra if you want it spicier!
  • Garlic
  • Pickle juice (from the container of pickles)
  • Tomatillos
  • Cilantro
  • Lime

Steps

  1. Char the veggies – add some oil to your pan and heat it over medium heat. Once the pan is hot, add the onion, jalapeno, tomatillos, and garlic. Cook for 10 or so minutes, flipping the veggies often so they dont burn, until softened & slightly charred/grilled.
  2. Blend – add the veggies along with the remaining ingredients to a blender and blend until smooth.
  3. Taste and adjust seasoning—add more pickle juice for extra tang, more lime, etc.
  4. Let it chill in the fridge for at least 30 minutes to allow the flavors to meld.
  5. Store – I like to store mine in mason jars or back in the pickle jar!

Storing homemade salsa

Store in an airtight container in the refrigerator for up to 5 days. Sometimes i’ll pour the salsa back into the pickle container, lid it, and store in the fridge OR i’ll store it in a large mason jar or divide it amongst a few smaller ones to share!

How to Use Dill Pickle Salsa

This salsa is more than just a dip—it’s a flavor booster for:

Tips & FAQ’s

  • Can I make this ahead of time as an appetizer for parties and gatherings? Of course! It tastes best after sitting in the fridge for a few hours. Simply just shake the jar well before serving!
  • Can I use sweet pickles? I wouldn’t, as this recipe is formulated to use dill pickles! The sweet pickles would totally change its flavor.

  • 1 16oz container dill pickles (I like Grillo's)
  • 2 tbsp olive oil or avocado oil
  • 4 tomatillos
  • 1-2 small jalapeno peppers, stems removed and halved
  • 1 small white or yellow onion, quartered or roughly chopped
  • 3-4 garlic cloves, peeled
  • 1 small bunch cilantro
  • 1/4 cup pickle brine
  • 1/2 lime, juiced

Instructions

    we just had a bbq and I was a little nervous to try this because I’d never had pickle salsa but WOW. it was a crowd favorite, a few people asked for the recipe!
