There are few things that can bring happiness like a good latte! Back in my late teens/early twenties, I worked as a barista and was in the coffee industry for almost 10 years and it was one of my favorite jobs i’ve ever had. I loved getting to chat with new people every day, build relationships with regulars, and I got to be on my feet all day, but I really think the creative aspect of creating new drink recipes was the most fun part!

I don’t know about you guys, but the second the sun comes out, i’m craving all things carrot cake. It just screams spring to me! So of course we had to hop on the carrot cake latte train! This homemade coffee syrup is made with more wholesome ingredients and contains less sugar than a typical coffee syrup, without sacrificing flavor! Every sip is full of warm spices and a slightly cake-y flavor. If you love a good homemade latte, this ones for you!

Can I use espresso instead of whipped coffee?

Definitely! I will share how to make a carrot cake latte with espresso shots in the recipe card below! However, if you haven’t tried whipped coffee, I highly recommend trying it! It makes this taste like one of those lattes i’d definitely pay $8 for 😉

My whipped coffee recipe comes togethers in less than 5 minutes (if you have a stand mixer), with just 2 ingredients, and is so easy to make! You can even save leftovers in an air-tight container and store it in the freezer and it holds it’s whipped texture. You can find it here (just use the “classic dalgona coffee” recipe!

How to make a carrot cake latte

Ingredients you’ll need

  • Carrot juice: I have tested this recipe using whole carrots and juicing them myself and highly recommend just purchasing carrot juice – not only does it make it easier and will save you so much time, but it came out better, too!
  • Coconut sugar: This is what gives the syrup it’s “brown sugar” flavor! You can also use regular brown sugar.
  • Monk fruit: I wanted to cut down the sugar a bit, so instead of using more coconut sugar or maple syrup, I swapped in monk fruit! However, you can use granulated white sugar instead!
  • Pumpkin pie spice: this is all the spices we need in one and using this makes it easier than having to get/grab different spices! If you don’t have pumpkin pie spice, you can play around with different amounts of cinnamon, ginger, and nutmeg (I.E. 1/2 tsp cinnamon, 1/4 tsp ginger & nutmeg, etc).
  • Vanilla extract & almond extract: I like to use both to give the syrup that classic cake-y flavor! If you can’t have almonds, simply omit the almond extract!

Steps to make carrot cake coffee syrup

  • In a small pot, add the carrot juice, spices, sea salt, and sugars.
  • Bring to a boil over medium-high heat, stirring occasionally. Let it boil for 10 minutes, keeping an eye on it as it’ll easily boil over.
  • After 10 minutes, remove from heat. Let it cool for about 10 minutes before storing it in an air tight container. After 10 minutes you can taste it and add any extra flavors you’d like (more vanilla, more cinnamon, etc.).
  • Store in a glass jar or container! I love these glass coffee dispensers.

How to assemble a carrot cake latte

  • Add a tablespoon or two of the syrup to the bottom of your glass. If you’re on the go, we love these cute to-go coffee cups!
  • Pour in a cup of your favorite milk.
  • If using espresso, add in your espresso shots.
  • Add in some ice.
  • You can top the latte with cold foam or a splash of creamer for an extra creamy experience!
  • If using whipped coffee, add it on top after the ice and give it a good swirl.
  • Enjoy!

Storing carrot cake syrup

Store carrot cake syrup in a glass jar or container in the fridge for up to 2 weeks!

Ingredients
  

  • 1 cup carrot juice
  • 1/2 cup coconut sugar (can sub brown sugar)
  • 1/3 cup monk fruit (can sub regular granulated sugar or more coconut sugar)
  • 1 tsp vanilla bean paste or vanilla extract
  • 1/4 tsp almond extract
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp sea salt

Instructions

  • Note: this syrup is made to not be too overly sweet. If you want a sweeter syrup, feel free to add in 2-3 tablespoons of maple syrup or extra coconut sugar!
  • In a small pot, add the carrot juice, pumpkin spice, sea salt, and sugars.Bring to a boil over medium-high heat, stirring occasionally. Let it boil for 10 minutes, keeping an eye on it as it’ll easily boil over.
  • After 10 minutes, remove from heat. Let it cool for about 10 minutes before storing it in an air tight container. After 10 minutes you can taste it and add any extra flavors you’d like (more vanilla, more cinnamon, etc.).
