One of the best jobs I ever had was working as a barista. I worked at a few cafe’s, family owned shops, and even whipped up coffee at a ski resort. I loved getting to chat with new people every day, build relationships with regulars, but more than anything, I loved the creative aspect of getting to create new drinks and have fun with different flavors.
When September hits, I think most of us can agree that we get extra excited about the fall coffees. Starbucks released their pumpkin spice lattes, eggnog is in the horizon – call me basic, but i’m READY. So I was extra excited to share this recipe today, where we’ll be making a healthy, fun spin on the classic bevy. Instead of adding sugar and preservative-laden syrups, were going to use a homemade pumpkin spice milk AND pumpkin spiced whipped coffee – double the pumpkin, double the fun! This may sound like a lot, but I promise it’ll be the most delicious coffee you’ve had!

Instead of just adding a pumpkin spice syrup to some milk with espresso, we are going to spice things up by using homemade pumpkin spice milk! This milk is so delicious you’ll be sipping it on it’s own or warming it up for a pumpkin spice steamer! However, it makes a creamy, delicious base to any iced or hot latte! Just a few ingredients are blended together to create a perfectly spiced, slightly sweet, but dairy and refined sugar-free plant-based milk! You can also add a dose of protein to boost the protein content, flavor, and sweetness!

Ingredients you’ll need
This isn’t a basic PSL – instead this healthy homemade pumpkin spice latte combines TWO sources of pumpkin spice for the ultimate flavor without having to add tons of artificial flavors, sugar, or preservatives! It’s really quick and easy to whip up, and you only need a few ingredients.
- Instant espresso – be sure to use instant espresso, not regular ground espresso!
- Pumpkin spice – store-bought or homemade! I love Trader Joe’s.
- Milk, of choice – I prefer a creamy plant-based milk like cashew or almond.
- Sweetener: For the pumpkin spice milk, you can use dates, coconut sugar, maple syrup, honey, etc. I usually use liquid monk fruit drops as they don’t add any sugar and I personally like the taste of them! For the whipped coffee, a granulated sweetener is needed. Coconut sugar, white sugar, powdered monk fruit sweetener, granulated monk fruit, etc. all work!
- Protein powder/collagen – I use both in this recipe, but you can omit if you’d like. Protein powder is blended into the milk to add a source of protein, make it creamier, and add flavor and sweetness. The collagen is added to the whipped coffee, but this is totally optional as well! It turns out just as great without it. I used Macro Mike Cinnamon Churro protein powder in the milk and it was INCREDIBLE. You can use my code “amb-dani“ for a discount!
- Vanilla extract

Make the pumpkin spice milk
Simply add all of the ingredients to a blender and blend until smooth. You can taste & adjust the milk as you’d like!

Whip your coffee
If you’re using espresso shots, you can skip this, but the whipped espresso is SO delicious and really creates an extra special coffee experience!
Assemble your healthy pumpkin spice latte
For an iced latte: Add ice to a glass, then pour over some pumpkin spice milk about 3/4 of the way up the glass. Top with the whipped coffee. Give it a stir and enjoy!
For a hot latte: Warm your pumpkin spice milk in a glass, about 3/4 of the way full. Once warm, top with the whipped coffee, stir, and enjoy!

FAQ’s about the best pumpkin spice latte
Can I use decaf coffee? Absolutely! Just be sure to use instant decaf coffee!
Aren’t lattes made with espresso? Can I just use espresso shots instead of whipped coffee? Yes! Most people don’t own espresso machines, so I wanted an option for those who still want a fancy coffee without the price tag of a machine. If you have an espresso machine, you can just use espresso shots, however you wont have the same frothy, cloud-like experience as the whipped coffee!
Can I make this pumpkin spice latte hot, rather than iced? Yes! Simply warm up the pumpkin spice milk or your milk of choice and add the whipped coffee on top!

Healthy Pumpkin Spice Latte
Ingredients
Whipped coffee
- 2 tbsp instant espresso
- 2 tbsp granulated sweetener (coconut sugar, granulated monk fruit, white sugar, powdered monk fruit, etc)
- 2 tbsp boiling water
- 1/4-1/2 tsp pumpkin pie spice
- 2 tbsp collagen (optional – can omit. Don’t sub any other proteins!)
Pumpkin spice milk
- 2 cups creamy plant-based milk, of choice (I like cashew but you can use canned coconut milk for an extra creamy texture)
- 1/4 cup pumpkin pure
- 1 1/2-2 tbsp sweetener of choice (honey, maple syrup) or monk fruit drops for a sugar-free option. You can also use 3 dates!
- 1 tsp vanilla extract
- 1 scoop of your favorite vanilla protein powder (optional but yummy!)
- 3/4 tsp pumpkin pie spice (more to taste)
- pinch of sea salt
Instructions
Whipped coffee
- In the bowl of your stand mixer with the whisk attachment, add all of the ingredients.
- Whip at high speed for 4-6 minutes until super frothy and light in color.
Pumpkin spice milk
- Add all of the ingredients to a blender and blend until smooth. Taste & adjust as you'd like.
Assembling a pumpkin spice latte
- Iced latte: Add some ice to a glass and pour over the pumpkin spice milk about 3/4 of the way full. Then top with the whipped coffee. Give it a stir and enjoy.
- Hot latte: Heat pumpkin spice milk and add to a glass, about 3/4 the way full. Top with the whipped coffee. Give it a stir and enjoy.
