If there’s one candy bar I’ve always thought was a little underrated, it’s the 100 Grand Bar. My mom loved them growing up, so I remember feeling extra excited whenever one showed up in my Halloween trick-or-treat bag. I mean, what’s not to love? Chewy, gooey caramel wrapped in a crispy chocolate coating; it sounds like pure magic.

However, as i’ve gotten older and after making them at home, I was honestly blown away. The homemade version completely changed my perspective. I’d always noticed that the store-bought ones had a slightly stale, artificial taste, but I never realized just how much until I made my own. The difference was undeniable, my friends!

Traditional 100 Grand Bars are made with caramel, chocolate, and crispy rice — but also packed with corn syrup, refined sugar, and processed fats.This homemade version swaps out all the junk for wholesome, natural alternatives:

  • Chocolate chips: Use whatever fits your dietary needs! I love ChocZero or Lily’s for no sugar-added chocolate chips (they make vegan and dairy versions!).
  • Maple syrup – honey can have a stronger flavor where as maple syrup adds a beautiful maple note. I love using a mix of the two for the best flavor an texture!
  • Honey – You can use more maple syrup instead of honey; however, I personally find that the texture turns out best when you use a combination of both ingredients.
  • Crispy rice cereal: I recommend checking the ingredients as most rice crispy cereals contain corn syrup and preservatives. I love One Degree Organics or the Whole Foods brand!
  • Almond butter or cashew butter: I wouldn’t recommend using peanut butter as it’ll alter the flavor of the bars.
  • Coconut oil: Alternativey, grass-fed butter, vegan butter also work!
  • Vanilla extract & sea salt

Steps to make healthy 100 grand bars

Step 1: Make the Caramel

In a small saucepan over low heat, add the honey and maple syrup. Over low-medium heat, bring to a light boil. Allow the mixture to boil for 8 or so minutes, swirling the pan frequently to precent burning, until it deepens in color and darkens a tad. Remove from heat. Add the almond butter, coconut oil, vanilla, and salt. Stir until smooth and glossy. Leave to cool in the pan for 10 or so minutes – It should start to thicken up.

Step 2: Form the 100 grand bars

Once it’s cool enough to touch, grab small amounts and form into a small, thick, rectangle. Place on a parchment lined baking dish. Once all the caramel has been formed, place them in the fridge for 30 minutes or so to firm up a tad. Once firm, you can re-shape them if they’ve flattened out. I like to fold mine in half and roll them, then press in the ends to form a rectangle.

Step 3: Coat with crispy Chocolate

Melt chocolate chips and coconut oil together in a microwave-safe bowl or double boiler until smooth. Stir in the rice crispy cereal. Then, dip each bar into the melted chocolate cereal, coating it entirely. Place the coated bars on the lined parchment sheet.

Step 5: Chill and Enjoy

Place coated bars on parchment paper and refrigerate until the chocolate is set — about 15 minutes.

  • 1/4 cup + 2 tbsp honey *do not sub more maple syrup
  • 2 tbsp maple syrup
  • 2 1/2 tbsp coconut oil
  • 1 1/2 tbsp almond or cashew butter
  • 1 tsp vanilla extract
  • pinch of sea salt

Chocolate coating

  • 1 1/4 cups chocolate chips
  • 1/2 tbsp coconut oil
  • 1/2-3/4 cup rice crispy cereal

Instructions

  • Dip each bar into the melted chocolate cereal mixture, then place on the lined parchment sheet.
  • Return to the fridge to allow the bars to firm up, before moving to an air-tight container. Store in the fridge and let thaw 5 minutes or so prior to eating for the gooiest caramel texture! You can store in the freezer or long-term storage, then let thaw before eating.

  1. I let the caramel cool down in the pot (step 3) and came back about an hour later to mold it into triangle shapes but it’s stuck in the pot and solid. Can I reheat it on the stove?
