Homemade gooey caramel is enrobed in a crunchy Rice Krispies chocolate coating to form Homemade 100 Grand Bars that are even more delicious than the store bought version! These homemade 100 Grand Bars are not only fresher, but honestly, they’re better than the original. Bonus? You'd never know these are made with simple, wholesome ingredients!
In a small saucepan, add the honey and maple syrup. Over low-medium heat, bring to a light boil. Allow the mixture to boil for 8 or so minutes, swirling the pan frequently to precent burning, until it deepens in color and darkens a tad. Remove from heat.
Add the almond butter, coconut oil, vanilla, and salt. Stir until smooth and glossy. Leave to cool in the pan for 10 or so minutes - It should start to thicken up. Don't let it cool too long.
Once it's cool enough to touch, grab small amounts and form into a small, thick, rectangle. Place on a parchment lined baking dish. Once all the caramel has been formed, place them in the fridge for 30 minutes or so to firm up a tad.
Once firm, you can re-shape them if they've flattened out. I like to fold mine in half and roll them, then press in the ends to form a rectangle.
Melt the chocolate chips and coconut oil together in a microwave-safe bowl or double boiler until smooth. Stir in the crispy rice cereal, starting with 1/2 cup and adding an extra 1/4 if desired. It shouldnt be too thick, as you want it to stick to the bars.
Dip each bar into the melted chocolate cereal mixture, then place on the lined parchment sheet.
Return to the fridge to allow the bars to firm up, before moving to an air-tight container. Store in the fridge and let thaw 5 minutes or so prior to eating for the gooiest caramel texture! You can store in the freezer or long-term storage, then let thaw before eating.

*Be sure to use 100% honey and 100% pure maple syrup! This recipe won't work with sugar-free maple syrup or maple syrup with additives.
