The most important step to remember, is to be patient! Let the Rolo’s freezer for a few hours, at least, but I like to freeze them overnight. When dates become frozen, they have such a similar texture to sticky/gooey caramel! They are natures delights!
How to make two ingredient rolo’s
Equipment:
- Mold: This is my favorite candy mold because it’s the perfect size and they come out looking just like Rolo’s! If you can’t get this one, just use something similar. You can also use a silicone mini muffin pan!
Ingredients:
- Dates: Medjool dates work best!
- Chocolate: I like to use Hu Kitchen chocolate to keep these refined sugar free, but you can use your favorite! If you want to use my code for a discount, it’s “danishealthyeats“.
Instructions:
- Melt the chocolate in a medium bowl until smooth. Add a little to the bottom of the mold, then place in the freezer for a few minutes.
- Rip the dates in half and roll the halves into balls. Once the bottom chocolate layer is firm, add a ball to each crevice of the mold. Cover in remaining chocolate.
- Place back in the freezer for 2-3 hours before removing from the mold. Enjoy!

- How to store homemade Rolo’s: You’ll want to store these in an air-tight container in the freezer! I don’t recommend storing them in the fridge.

Two Ingredient Rolo Recipe
Rolo's were always my candy of choice growing up, so it was only time before I decided to make a healthier version for the blog. This recipe happens to be two ingredients and what I like to call Natures Candy! This version is vegan, gluten free, and contains no added sugar.
Ingredients
- 6-7 large pitted medjool dates
- 1 cup chocolate chips
Instructions
- In a medium bowl, melt the chocolate. You an use the double boiler method or heat it in the microwave. Heat in 30 second increments, stirring well between each, until completely smooth.
- Add a little chocolate to the bottom of the molds. I like to use a chopstick to help swirl it around and bring it up the sides a bit. Then place the mold in the freezer for a few minutes until firm.
- Rip the dates in half and roll the halves into balls. Place one ball into each of the mold crevices. Use the remaining chocolate to cover the tops, ensuring you cover the entire date ball.
- Place back in the freezer for 2-3 hours until firm. Remove the Rolo's from the mold and store in an air-tight container in the freezer.
