They’re sweet, chewy, and taste just like cookie dough—except they’re made with simple, nourishing ingredients, and are packed with some protein! Perfect for that mid-afternoon hunger craving but also the hankering for something sweet!

Ingredients You’ll Need

These healthy edible cookie dough bites are made with a few pantry staple ingredients that create a delicious flavor, perfect texture, and nourishing ingredient profile! The full recipe is in the recipe card at the bottom of the post, but here’s everything you’ll need:

  • Old-fashioned Rolled Oats (use certified gluten-free if needed) – creates that soft, doughy texture.
  • Raw cashews – adds creaminess and healthy fats. I purchase mine on Amazon as I find them to be the cheapest! For a nut-free option, can use sunflower seeds instead of cashews! They’ll have a different flavor but will still be delicious! If you can have nuts other than cashews, macadamia nuts work great!
  • Maple syrup or honey – a natural sweetener that replaces refined sugar.
  • Protein Powder – adds flavor, natural sweetness, and some extra protein to the recipe. Use a flavor you love the taste of! I used Ka’Chava Vanilla.
  • Collagen – this is totally optional! I wanted to up the protein content even further, so I love adding collagen. It doesn’t affect the texture of the cookie dough whatsoever, so you can simply leave it out but do NOT substitute more protein powder of any other kind as this will affect the dough.
  • Vanilla extract – for that classic cookie dough flavor. This ingredient makes all of the difference, so be sure not to skip it!
  • Dark chocolate chips – the must-have mix-in! Use dairy-free if needed.
  • Pinch of sea salt – balances the sweetness.

Tools used to make these cookie dough treats

To make this no-bake recipe, you’ll only need a few kitchen tools — a food processor, measuring ups to measure ingredients, and a spatula! A cookie scoop is also great for shaping the balls, but not necessary!

Ready to make the easiest treat ever!? These make the best make-ahead option for enjoying throughout the week! I like to prep a batch for the week ahead to have a healthy option ready-to-go!

Process the ingredients

In a food processor, add the oats, cashews, and protein powder. Process for a minute or so until flour-like and no large chunks of oats or cashews remain. Add the remaining ingredients (maple syrup, sea salt, & vanilla extract) and process until “dough” forms. Fold in chocolate chips (Because what’s cookie dough without chocolate?!).

Roll into balls

Scoop and roll into bite-sized cookie dough balls and place on a parchment-lined baking sheet. I like to use a cookie scoop to make this easier & make them more uniform!

Chill & enjoy

Pop them in the freezer for an hour or so before moving to an air-tight container. Store in the freezer!

Tips & Variations

  • Make it protein-packed: Add a scoop of vanilla or chocolate protein powder for an extra boost.
  • Switch up the mix-ins: Try chopped nuts, sprinkles, or white chocolate chips.
  • Add some spice – cinnamon would be yummy!

FAQ’s

Can I bake this edible cookie dough? This cookie dough recipe is formulated to enjoy no-bake and I wouldn’t try baking them!

Can I make them nut-free? You can use sunflower seeds instead of cashews! They’ll have a different flavor but will still be delicious! If you can have nuts other than cashews, macadamia nuts work great!

How big should I make the cookie dough balls? I recommend making each bite about 1.5 inches, which will create around 12 total.

Storage

These stay perfectly chewy in the freezer! Store in an air-tight container in the freezer for up to 2 months!

Ingredients
  

  • 1/3 up old fashioned rolled oats
  • 1 cup raw cashews
  • 1/4 cup protein powder
  • 2 tbsp collagen (optional. Can omit, but don't sub any other protein)
  • 1/4 cup maple syrup or honey
  • 1 tbsp vanilla extract
  • 1/2 tsp sea salt
  • 1/2 cup chocolate chips

Instructions
 

  • In a food processor, add the oats, cashews, protein powder, collagen (if using), and sea salt. Process for a minute or so until flour-like and no large chunks of oats or cashews remain.
  • Stop the processor & add in the maple syrup and vanilla extract. Process until "dough" forms. Fold in the chocolate chips. Note: The dough should be sticky enough to hold together but shouldn't be "wet" or too sticky to hold. If it is, i'd add in a tablespoon or two of oat flour or more protein powder until it reaches a workable texture!
  • Scoop and roll into bite-sized cookie dough balls and place on a parchment-lined baking sheet. I like to use a cookie scoop to make this easier & make them more uniform!
  • Pop them in the freezer for an hour or so before moving to an air-tight container. Store in the freezer!
