We swap mayo for avocado as it makes the deviled eggs filling just as creamy and delicious! Other amazing substitutes are greek yogurt or sour cream. The results are light, fluffy, and flavorful!

As an avocado lover, avocado might be my favorite swap for mayo in deviled eggs. They also make a bit of a healthier option, as they’re packed with fiber, healthy fats, and nutrients that support digestive, eye, heart, and bone health. How to Make Eggs for Avocado Deviled Eggs

For any deviled eggs, you need to start with hard boiled eggs. You can use an egg cooker (my mom loves this!) or the stovetop method, which I prefer! They’re super easy! Another life hack is to buy pre-boiled eggs at the store. Then you just have to cut them in half and prepare the filling!

Place eggs in a single layer in the bottom of a large pot. Cover with a total depth of about 3-inches of water (the eggs should be covered, plus about an additional inch of water). Bring to a boil over high heat. When water comes to a rolling boil, cover and remove from heat immediately. Let pot sit covered for about 10 minutes before transferring to an ice bath (bowl full of ice and cold water). When eggs are cool enough to handle, you can store them in the fridge or begin peeling them!

Expert tips

  • Storing: Store them in an airtight container in the refrigerator for up to 3 days. I love this  Rubbermaid Egg Keeper Container for storing them in.
  • Making deviled eggs ahead of time: If you are planning to make these for a party, I would prep and peel your hard-boiled eggs the day before or the morning of. Then prep the filling as close as you can to when you will be serving them. Although the lime juice helps keep them fresh a little longer, avocados will oxidize and turn browner as the hours go by. They will stay nice and pretty for a few hours though!
  • Life hack to save time: Buy pre-boiled eggs at the store. Then you just have to cut them in half and prepare the filling!

  • To the same bowl, add the avocado. Using a fork or potato masher, mash the mixture together until no chunks remain. Then stir in the remaining ingredients (avocado, lime juice, cilantro, onion, & spice). Taste & adjust as you'd like.
  • I like to use a cookie scoop to distribute the avocado filling amongst the egg white halves, however you can also just use a spoon or a piping bag for a prettier look!
  • Top the eggs with red pepper flakes, extra cilantro, chopped chives, or red pepper flakes! Enjoy!
