Avocado Deviled Eggs

These healthy Avocado Deviled Eggs (or guacamole deviled eggs!) combine avocado, fresh lime juice, spices, and cilantro for a no-mayo, light and fresh alternative to traditional deviled eggs. They make the perfect for low-carb snack or an easy appetizer at your next party or holiday get-together! They are must-try for any avocado lover and for those looking for a healthier deviled egg recipe without mayo!

Ingredients
  

Avocado deviled eggs

  • 6 large hard boiled eggs
  • 2 small ripe avocacdo
  • 3-4 tbsp finely chopped cilantro *I LOVE cilantro, so I use more, but feel free to add it to your liking!
  • 1 tbsp lime juice (1 small lime)
  • 1/2 tsp sea salt
  • 1/4 tsp garlic powder
  • 1 1/2-2 tbsp super finely diced red onion *I love onion so I use 2 tbsp!
  • 1 tsp red pepper flakes (mix into filling or sprinkle over top!)

Topping

  • jalapeno slices, red pepper, chopped chives, etc.

How to hard boil eggs

  • You can make them in an egg cooker or on the stovetop! Place eggs in a single layer in the bottom of a large pot. Cover with a total depth of about 3-inches of water (the eggs should be covered, plus about an additional inch of water). Bring to a boil over high heat. When water comes to a rolling boil, cover and remove from heat immediately. Let pot sit covered for about 10 minutes before transferring to an ice bath (bowl full of ice and cold water). When eggs are cool enough to handle, you can store them in the fridge or begin peeling them!

Preparing the deviled eggs

  • Cut eggs in half and remove yolks, placing them in a medium bowl.
  • To the same bowl, add the avocado. Using a fork or potato masher, mash the mixture together until no chunks remain. Then stir in the remaining ingredients (avocado, lime juice, cilantro, onion, & spice). Taste & adjust as you'd like.
  • I like to use a cookie scoop to distribute the avocado filling amongst the egg white halves, however you can also just use a spoon or a piping bag for a prettier look!
  • Top the eggs with red pepper flakes, extra cilantro, chopped chives, or red pepper flakes! Enjoy!

Notes

  • *This egg cooker is great for small batches!
  • Storing: Store them in an airtight container in the refrigerator for up to 3 days. I love this  Rubbermaid Egg Keeper Container for storing them in.
  • Making deviled eggs ahead of time: If you are planning to make these for a party, I would prep and peel your hard-boiled eggs the day before or the morning of. Then prep the filling as close as you can to when you will be serving them. Although the lime juice helps keep them fresh a little longer, avocados will oxidize and turn browner as the hours go by. They will stay nice and pretty for a few hours though!
  • Life hack to save time: Buy pre-boiled eggs at the store. Then you just have to cut them in half and prepare the filling!
