I used healthier store-bought cookies to stir into the chocolate to create this slightly cinnamon-y, crunchy coating that is seriously to die for in combination with the raspberries!

How to make frozen yogurt Popsicles

Ingredients

To make these homemade frozen yogurt popsicles, you’ll need:

  • Frozen raspberries & freeze dried raspberries: Feel free to swap in your favorite berry! Using a mix of frozen and freeze-dried creates the richest flavor!
  • Greek yogurt or coconut yogurt: Be sure to use a THICK yogurt and opt for full-fat for the creamiest texture! For a dairy-free/vegan option I love Culina coconut yogurt!
  • Vanilla protein powder: this is totally optional but creates a creamy outcome while upping the protein content! I love Macro Mike vanilla buttercream protein – it tastes like ice cream! You can use my code “amb-dani” for a discount!
  • Vanilla extract
  • Coating: white chocolate (dairy-free or regular) and cookies for the cookie crunch
    • The white chocolate cookie coating pairs so well with the raspberry flavor! I have a few white chocolate recommendations! For dairy-free/vegan white chocolate, I love Pascha. For a sugar-free option, ChocZero, Bake Believe, and Lily’s are all great!
    • Cookie recommendations: I use Siete Mexican Wedding Cookies or Simple Mills toasted pecan cookies!

Steps to Make Raspberry Frozen Yogurt Popsicles

  • Step 1: Blend the base In a blender or food processor, combine all of the ingredients and blend until smooth. Taste & adjust as needed.
  • Step 3: Pour into molds Pour the mixture into popsicle molds. Tap gently to release any air bubbles.
  • Step 4: Freeze Insert sticks and freeze for at least 4–6 hours, or until fully set.
  • Step 5: Dip! I love coating these berry popsicles in a white chocolate cookie coating. It creates the most heavenly texture and flavor combination! Simply mix crushed cookies and white chocolate and dunk the popsicles! Then you’ll return them to the freezer to firm up.
  • Step 6: Enjoy! To release, run the molds under warm water for a few seconds. Enjoy your creamy, fruity treat!

  • Use silicone molds for easy removal.

Ingredients
  

Frozen yogurt pops

  • 1 1/2 cups greek or coconut yogurt (use the thickest you can find!) *higher fat yogurt will create the creamiest texture!
  • 1/2 cup frozen raspberries
  • 1/2 cup freeze-dried raspberries *can sub more frozen raspberries, I just love the flavor of using both frereze-dried and frozen. I get mine at trader joes!
  • 1-2 scoop vanilla protein (optional)
  • 1 can full fat coconut milk (we'll use the solid cream from the top & 1/4 cup of the milk) *chilled in the fridge for an hour or so
  • 3-4 tbsp maple syrup or honey

Coating

  • 1 1/2 cups white chocolate chips *see post for suggestions! Use dairy-free/vegan if needed.
  • 1 tbsp coconut oil
  • 1/2 bag Siete Mexican shortbread cookies, Simple Mills Pecan cookies, or Simple Mills Sweet thins, crushed

Instructions
 

  • In a blender, combine all of the yogurt pop ingredients. For the canned coconut milk, scoop the cream from the top of the can and add it to the blender. Then use 1/4 cup of the milk from the can.
  • Blend until smooth, then taste & adjust as you'd like (more sweetener, etc).
  • Pour the mixture into your popsicle mold and place in the freezer for 3-4 hours or overnight, until they are COMPLETELY firm.

Coating

  • When ready to dunk them in chocolate, melt the chocolate and coconut oil in a heat proof bowl in the microwave or using a double-boiler method. If using the microwave, heat in 30 second increments, stirring between each one until smooth. Crush the cookies and stir it into the chocolate to create the crunchy coating.
  • Carefully dip each one and the place on parchment-lined baking sheet or if using a popsicle mold like mine, you can place them handle side-down back in the mold they sit up straight to firm up. Place back in the freezer for a few minutes until the chocolate is hardened before enjoying.
  • Note: these are best when left out to thaw for 10 minutes prior to eating. This allows time for the frozen yogurt to thaw a bit and become creamier!
