Giant Spring Rolls with Harissa Peanut Dipping Sauce
These Giant Spring Rolls are loaded with fresh, crunchy veggies, wrapped in soft rice paper, and served with the most delicious creamy Harissa Peanut Dipping Sauce!
Rolls
- Rice paper
- green leaf lettuce
- red bell pepper
- 1/2 cucumber
- fresh herbs: cilantro, mint (optional)
- vermecelli noodles, rice noodles, etc. (also optional!)
- protein of choice (cooked shrimp, air-fried tofu, etc).
Harissa Peanut Dipping Sauce
- 2 tbsp peanut butter
- 1 tbp harissa paste
- 1 tsp maple syrup
- 1 tbsp lime juice
- 2-3 tbsp water, to thin
Add warm water to a large, shallow bowl. Quickly dip the rice paper wraps in the warm water for a few seconds. Lay the two rice paper wrappers beside each other, overlapping around an inch and a half in the center.
Lay down a layer of lettuce leaves, then the noodles (if using), protein, and vegetables.
Fold all of the ends of the wrap in over the fillings and then roll it over itself to make the giant roll. I like to cut mine in half.
For the dipping sauce, combine all ingredients, whisking or blending until completely smooth. Taste & adjust as you'd like. Enjoy!
