A spin on the classic summer camping treat, these frozen S’mores should be devoured all year long – they’re that good! I am all for a high-protein treat to curb my sweet tooth and this is one I have been making on repeat. Originally, I was making my classic Frozen S’mores recipe with chocolate, but after needing to use up a jar of homemade strawberry chia jam, my wheels started turning!

Who doesn’t love a decadent s’more? This childhood classic has been transformed into a healthy, high-protein frozen treat that satisfies your sweet tooth while being made with better-for-you ingredients! And if you haven’t tried a S’mores with peanut butter, i’m about to change your life!

How to make frozen protein s’mores

Full recipe is in the recipe card at the bottom of the post! Most frozen s’mores are made with marshmallow fluff and processed ingredients. These are a fun, more wholesome spin on the classic! Dreamy whipped topping replaces marshmallow fluff but creates the most decadent, creamy filling!

Ingredients

  • Graham crackers: Use whatever fits your dietary needs! For a paleo option, you can use Simple Mills grahams or cookies and layer them across the bottom of the pan, like you’d lay the graham crackers!
  • Protein powder: Be suer to use a flavor you love as this will affect the taste of the whipped topping! My favorite to use is Macro Mike – their flavors are clean and taste like dessert! I used salted caramel for these! My code for them is “amb-dani”.
  • Tub of Coconut whipped topping or cool whip: I like to use the SoDelicious coconut whipped topping, however you can use Tru Whip, Cool whip, etc. I prefer to use one with wholesome ingredients and no additives or preservatives!
  • Peanut butter: You can also use another nut or seed butter if you can’t have peanuts!
  • Maple syrup: Just a tad is used to create the magic shell! You can also use honey.
  • Coconut oil: This is needed to create the magic shell as well, as it helps firm it up and create the “shell” affect.

Steps to make frozen s’mores

  1. Prepare the Protein Filling: Add the protein to your tub of whipped topping, along with the peanut butter, if using. Mix well until no lumps remain and it’s smooth, thick, and creamy.
  2. Assemble the S’mores: Lay half of the graham crackers flat on a parchment-lined square baking pan. Scoop a generous amount of the protein filling onto the crackers and spread evenly.
  3. Make the magic shell: In a small bowl, combine the peanut butter, melted coconut oil, sea salt, & maple syrup until smooth & creamy. Slowly pour this over the whipped topping layer, gently spreading it out. Place the remaining graham crackers over top and just slightly and gently press them down to stick.
  4. Freeze: Freeze the assembled s’mores for at least 3-4 hours or until firm. The longer they freeze, the more the whipped topping layer will firm up!

FAQ’s & Tips for Success

  •  Using parchment paper is a must! Leaving the overhanging edges will help remove the bars from the tray!
  • Keep It Cold: These treats are best enjoyed straight from the freezer, so store leftovers in an airtight container in the freezer!
  • For a neater presentation and cleaner lines, trim any excess frozen filling from around the bars. 
  • Thaw your cool whip. Take it out when you take the cream cheese out of the fridge so you don’t forget to do either one!
  • Can I make these ahead of time? Yes! Assemble them and freeze the batch of frozen s’mores up to 24 hours in advance. When you’re ready to serve them, allow them to sit at room temperature for 15 minutes first.

Recipe variations

  • Stir chocolate chips or nuts into the whipped topping for extra crunch. Pistachios are delicious with strawberries!
  • Stir cinnamon into the whipped topping.
  • Toss in some sprinkles, because they make everything more fun!

Storage

If you’re not eating the frozen s’mores right away, wrap each square individually with plastic wrap and transfer them to a freezer bag. Keep frozen for up to 3 months.

Ingredients
  

  • 8 sheets graham crackers or similar cookies
  • 1 tub coconut whipped topping or cool whip *I use So Delicious Coconut Whip
  • 1 1/2 scoops of your favorite protein powder
  • 1/3 cup strawberry jam *or any jam you like!

Peanut butter magic shell

  • 5 tbsp peanut butter
  • 1 1/2 tbsp coconut oil
  • 2 tbsp maple syrup
  • pinch sea salt

Instructions
 

  • Prepare the Protein Filling: Add the protein to your tub of whipped topping, along with the strawberry jam. Mix well until no lumps remain and it's smooth, thick, and creamy.
  • Assemble the S'mores: Lay half of the graham crackers flat on a parchment-lined square baking pan. Scoop a generous amount of the protein filling onto the crackers and spread evenly. You can use the whole tub, half, 3/4 – however much you want! I like a thick layer. Leave leftovers in the freezer or fridge to use for your next batch. Place the pan in the freezer for 30 minutes to an hour or so. This helps keep the magic shell layer from just drizzling off.
  • Make the magic shell: In a small bowl, combine the peanut butter, melted coconut oil, sea salt, & maple syrup until smooth & creamy. Slowly pour this over the whipped topping layer, gently spreading it out. Place the remaining graham crackers over top and just slightly and gently press them down to stick.
  • Freeze: Freeze the assembled s’mores for at least 3-4 hours or until firm. The longer they freeze, the more the whipped topping layer will firm up!
  • For a neater presentation and cleaner lines, trim any excess frozen filling from around the bars!

    I wasn’t sure how I would feel about these. I was more intrigued by the coco whip than anything. Oh my gosh. These are so good!! I used Enjoy Life mini chocolate chips sprinkled on top of the whip layer; added a nice crunch. Delicious.

    1. Hi Katrina! So the only reason I don’t provide the nutritional info is because it will vary greatly depending on the different brands of products used (cookies, whip, etc.)! So i always recommend plugging the recipe into my fitness pal or another similar app, with the brands you use for the most accurate numbers! (:
