Healthy Coconut Clusters

Made with just 5 ingredients, these Healthy Coconut Clusters are the perfect crunchy, sweet & salty snack! Packed with nutrient-dense seeds and naturally sweetened with maple syrup, they are made without butter, oil, or sugar.  Plus, they're gluten-free, nut-free, vegan, dairy-free, and refined sugar-free!

Ingredients
  

  • 1 1/2 cups coconut chips
  • 1/3 cup Pumpkin seeds
  • 1/3 cup Sunflower seeds
  • 1/4 cup chia seeds
  • 5 tbsp maple syrup
  • 1 tsp vanilla extract & pinch of sea salt *optional

Instructions
 

  • Preheat the oven to 350F. Grease a mini muffin pan with spray oil or line a baking sheet with parchment paper (I prefer making them in the muffin tin to ensure they stay together perfectly but either method works!)
  • In a small bowl, combine all of the ingredients, being sure to mix well so the maple syrup coats all of the coconut and seeds.
  • Using a spoon or cookie scoop, scoop the seed mixture into the muffin pan, filling them to the top. I like to use the back of the spoon or scoop to pack them in tight so they don't fall apart.
  • Bake for 12-14 minutes until golden. Be careful not to over-bake - you don't want the coconut to burn!.
  • Cool! Let cool for at least an hour and a half before trying to remove them from the pan

Notes

Note: If you use the baking sheet method and the liquid from the maple syrup spreads out from the clusters, simply use a spatula to gently push it back toward the clusters. This is what holds them together and helps them firm up once they have cooled! (This is why I like using the muffin tin!)
