I love having these as a comfy fall breakfast, during the transitional season when it’s still warm, but all year round as well!
Overnight oats are great to prep for busy weekdays – if you have kids or toddlers in school, or struggle with busy mornings, these overnight oats will be a life saver! Simply mix everything together, store in a jar, and it’s ready to grab and go in the morning!

Overnight oats are a breakfast or snack made by soaking oats in liquid overnight in the fridge, instead of cooking them. The oats absorb the milk and soften, resulting in a creamy oatmeal that’s enjoyed straight from the fridge – the perfect no fuss, no-cook recipe!

- Storage container: I love these so I can prep multiple days worth of breakfast at once! Small mason jars also work great!

- Oats: Old-fashioned oats create the creamiest overnight oats. Make sure to grab certified gluten-free oats if necessary!
- Coconut sugar: Just a little coconut sugar gives that brown sugar cinnamon roll flavor, however you can use golden monk fruit for a lower sugar option! If you prefer a different sweetener such as pure maple syrup or coconut sugar, that will also work, just won’t be as cinnamon roll-like!
- Coconut yogurt: Greek yogurt will also work! I like the brands CocoJune & Culina for coconut yogurt! Sometimes I like to add some on top of the oats as the “icing” topping!
- Cinnamon: Cinnamon gives these oats their irresistible cinnamon roll flavor!
- Protein powder: Adding a few tablespoons of protein powder will help keep you satiated and your blood sugar balanced. Be sure to use a flavor you really love as it’ll add to the flavor of the oats! I used Macro Mike caramel cinnamon bun (You can use my code: amb-dani for a discount!).
- Chia seeds: Overnight oats with chia seeds add extra nutrients & fiber to your diet, while keeping you satiated and full!
- Milk: Plant-based milk or regular dairy milk will both work! I like to use almond or cashew milk!
- Vanilla extract: A splash of vanilla extract enhances the cinnamon roll flavor!
Steps to make cinnamon roll overnight oats
- In a large mixing bowl, combine all of the ingredients, mixing well until combined. You can taste the mixture and adjust it as you’d like (sweetener, spice, etc.)
- Divide the mixture amongst your jars and place in the fridge for at least 3-4 hours, preferably overnight.
- When you’re ready to eat, give the oats another stir, add your desired toppings, and enjoy!
- You can add a little cinnamon roll icing for extra fun or a cinnamon sugar swirl to add layers! I topped mine with one of my no bake cinnamon rolls for fun!
Flavor variations
- Apple: Adding chopped apples or sautéed apples to these oats gives them an apple cinnamon roll feel!
- Chocolate chip: White chocolate chips or milk chocolate chips both work great in this recipe! If you love chocolate chip cinnamon rolls, definitely give this a try!
- Pumpkin spice: Swap the cinnamon for pumpkin spice for the perfect fall breakfast!
- Cream cheese: Enhance the flavor of these oats by swapping 1/2 of the yogurt with cream cheese. This adds a cream cheese frosting flavor! (You can use dairy-free or regular cream cheese).
- Salted caramel: Swirl in some date caramel and sea salt!
- Pecan cinnamon roll oats: Stir in chopped pecans.
- Sliced banana (wait until serving to add them!)
- Tablespoon of cream cheese (dairy-free or regular!)
- Add a no bake cinnamon roll on top!
Storage
These can be stored in an air-tight container in the fridge for up to 5 days. You may want to add an extra splash of milk prior to eating if they’ve thickened up too much!

Expert tips & FAQ’s
- If you plan to add toppings, wait to add them until you are ready to eat the overnight oats.
- Can you heat overnight oats? Sure! Just dump them into a bowl with 1/4 cup so extra milk. Give it a stir, then heat. You can add more milk as needed until it reaches your desired consistency.
- Can you use steel cut oats for overnight oats? I don’t recommend using steel cut oats as they yield a different consistency and take hours longer to soak. Old-fashioned oats create the creamiest texture for these overnight oats, but you can substitute with quick oats if necessary.
- Do you have to wait overnight to eat overnight oats? Chilling the oats overnight allows them to develop the best flavor and thickest consistency, but they can be enjoyed after 4-6 hours.
- Adjust the thickness/texture of your overnight oats by adding more or less liquid. I like to add a little extra liquid to my oats the next morning, prior to eating.
- If storing oats for multiple days, be sure to give them a good stir before eating and/or add another splash of almond milk.
- Can you make overnight oats without yogurt? Yogurt makes the oats really creamy and adds a little extra flavor to the recipe. However, you can definitely leave it out. They won’t be nearly as creamy but should still be delicious! I’d just recommend using an extra creamy milk or a splash of creamer like NutPods.
