I am a huge (borderline-obsessed) coffee girl. Working as a barista was honestly one of my favorite jobs ever. Sure, chatting with regulars and making little connections was sweet, but dreaming up fun new drinks? The best part. The only downside? A cute coffee-shop latte can sneak in 30g+ of sugar without even trying. So I made it my mission to whip up versions that are a little more blood-sugar-friendly. This one is naturally sweetened with just a tablespoon of honey—and let’s be real, a little homemade marshmallow fluff has never hurt anyone 😉
This recipe gives you all the nostalgic s’mores flavors (hello marshmallow, chocolate, and graham!) without the heaviness of traditional syrups. It’s naturally sweetened, easy to customize, and so good you’ll want to make it every morning!

Ingredients You’ll Need
You only need a handful of simple ingredients to make the perfect s’mores latte
- Espresso: if you don’t have an espresso machine, most stores sell canned espresso that works great or you can even use instant espresso.
- Chocolate milk: we’re making an easy, no-strain, plant-based chocolate milk with cashews, cacao powder, and vanilla however, you can use your favorite store-bought as well!
- Marshmallow fluff: because no s’mores recipe is complete without it! We will be using my super easy homemade marshmallow fluff!
- Honey: Just a little honey is used to sweeten the latte and really adds to the flavor, combined with the cinnamon and sea salt!
- Cinnamon: to get that graham cracker flavor!
- Sea salt: don’t skip this, it makes all the difference!
How to Make a Healthy S’mores Latte
Step 1: Make the chocolate milk
In a blender, combine all the ingredients. Blend until completely smooth. You can taste it and adjust as you’d like. Store in a glass jar or container in the fridge.
Step 2: Prepare the espresso
Add some honey, sea salt, and cinnamon to the bottom of a bowl or espresso cup. Brew your espresso shots over top of it. Then, use a whisk to mix it well so the honey disolves.
Step 3: Prepare your latte
Add some marshmallow fluff to the sides of your glass. Then add ice, the espresso, and lastly, the milk. I like to add the marshmallow fluff to a piping bag and pipe it over the top. You can top with some Siete or Simple Mills cookie crumbs for extra fun 😉 It becomes a cozy, melty, chocolatey masterpiece.

Hot S’mores Latte Version
To make it hot:
- Prepare the chocolate milk & espresso the same as above.
- Heat your milk using a frother or on the stove.
- Add the espresso mixture to your mug and top with the steamed milk.
- Add your marshmallow + graham toppings.
Variations
- Protein S’mores Latte: Mix in a scoop (or half) of chocolate protein powder.
- Dairy chocolate milk: You can just blend cocoa powder, vanilla, and sea salt with regular milk to create chocolate milk!

The Best S’mores Latte
Ingredients
Chocolate milk
- 1 cup raw cashews
- 3-4 cups filtered water (for extra thick milk, use 3 cups)
- 3-4 tbsp maple syrup or monk fruit OR 3-4 pitted medjool dates
- 1/4 cup raw cacao powder
- 1 1/2 tsp vanilla extract
- 1/2 tsp sea salt
Marshmallow fluff
- 1 batch Marshmallow fluff recipe! *save leftovers!
For the espresso
- 2 espresso shots
- 1 tbsp honey
- 1/2 tsp cinnamon
- good pinch of sea salt *don't skip!
Instructions
Chocolate milk
- Add all ingredients to a high-speed blender.Blend on high for a couple minutes until completely smooth and creamy. Taste and adjust sweetness or chocolate intensity. Store leftovers in an air-tight container in the fridge & shake before use!
Assembling the latte
- Add the honey, sea salt, and cinnamon to the bottom of a bowl or espresso cup. Brew your espresso shots over top of it. Then, use a whisk to mix it well so the honey disolves.
- Add some marshmallow fluff to the sides of your glass. Then add ice, the espresso, and lastly, the milk.
- You can dollop the marshmallow fluff over top or use a piping bag and pipe it over the top. I love sprinkling over a crushed Siete or Simple Mills cookie for extra fun! Enjoy!
