Ingredients You’ll Need

This healthy chia pudding recipe uses simple, wholesome ingredients.

  • Chia seeds
  • Milk of choice (almond milk, coconut milk, or dairy milk)
  • Pistachios, shelled: dry roasted and salted, raw, whatever you want! I prefer dry roasted and salted.
  • Yogurt: greek yogurt or thick coconut yogurt both work great! I recommend making sure it’s just a thick variety as watery, thinner yogurts won’t create the same thick texture.
  • Sweetener of choice: monk fruit, maple syrup, or honey
  • Collagen or protein powder: This is optional, but adds a dose of protein to keep you even more satiated! I used macro mike vanilla buttercream (You can use my code “amb-dani” for a discount!)
  • Vanilla extract & sea salt
  • Freeze dried strawberries: optional! I use it as the strawberry topping!

How to Make Pistachio Chia Pudding with strawberry yogurt topping

Step 1: Blend the pudding

Blend pistachios, protein powder (if using), yogurt, vanilla extract, sea salt, and sweetener with your milk of choice until smooth. Stir in the chia seeds.

Step 2: Pour into jars

Divide the mixture amongst 2 jars.

Step 3: Optional strawberry yogurt topping

If you want to add the strawberry yogurt topping, blend freeze dried strawberries until powder-form. Stir into yogurt or add the yogurt to the blender and blend. Top the pudding with the yogurt mixture.

Step 4: Chill and enjoy!

Place in the fridge for at least 3-4 hours-overnight. This allows it enough time to thicken up! Before serving, top with chopped pistachios and extra strawberry slices. Enjoy straight from the jar or bowl for an easy grab-and-go breakfast.

  • Stir twice. After mixing the chia seeds, stir again after about 10 minutes to prevent clumping.
  • Adjust thickness easily. Too thick? Add a splash of milk. Too thin? Stir in another teaspoon of chia seeds.

Ingredients
  

  • 2/3 cup milk, of choice (creamier, thicker milks work best!)
  • 1/3 heaping cup shelled pistachios
  • 1/2 cup thick greek yogurt or coconut yogurt
  • 1/2 cup chia seeds
  • 3-4 tbsp maple syrup, honey, or monk fruit *to taste
  • 3 tbsp protein powder (optional! can omit)
  • 1 1/2 tsp vanilla extract
  • good pinch of sea salt

Strawberry topping

  • 1 oz bag freeze dried strawberries
  • 1 cup yogurt
  • 1 tbsp honey or maple syrup (optional)

Instructions
 

  • Blend pistachios, protein powder (if using), yogurt, vanilla extract, sea salt, and sweetener with your milk of choice until smooth. You can taste the mixture & add a dash more sweetness, salt, vanilla, etc. as desired! Then stir in the chia seeds.
  • Pour the mixture into 2 individual jars or bowls. Place in the fridge for at least 3-4 hours-overnight. This is where the magic happens!
  • Optional strawberry topping: If you want to add the strawberry yogurt topping, blend freeze dried strawberries in a blender or small food processor, until powder-form. Stir into yogurt or add the yogurt to the blender and blend. Top the pudding with the yogurt mixture.
