Healthy Gluten-Free Angel Food Cake (Naturally Flourless!)

Okay, sometimes you just want a dessert that tastes amazing and fits into your everyday life. I’m all about the 80/20 approach and fully believe in enjoying the real thing, but as someone who wants a little something sweet every single day, I also love having options that are a little more nourishing and satisfying.

Is this the dessert I’d bring to a family gathering and ask Grandma to approve? Probably not 😂 (but hey, maybe she’d love!?) But is it delicious, actually satisfying, and something you can enjoy on the regular when that sweet tooth hits? Absolutely. And the texture for me, is as close as it gets.

Little tip!! This would also be incredible with my homemade Blueberry marshmallow fluff as a topping!

Equipment you’ll need

  • Stand mixer or hand mixer
  • Angel food cake pan: You need an angel food cake pan (a tube pan with straight, ungreased sides) because the delicate egg-white foam needs physical structure to rise and hold its shape.

Ingredients you’ll need

  • Egg white powder — please not that I have not tried using fresh egg whites for this recipe and I would not recommend using carton egg whites. I know it can be frustrating having to buy an ingredient for a recipe, but I promise the egg white powder makes this SO easy and you don’t have to waist a dozen egg yolks! 😉
  • Protein powder — replaces the cake flour entirely while also adding some flavor and sweetness. It’s important here to use a flavor you really love the taste of! My favorite is the Macro Mike Vanilla Buttercream protein (you can use my code “amb-dani” for a discount!). It tastes AMAZING and adds so much to this recipe. Keep in mind, this is a plant-based protein. I have not tested this recipe using whey.
  • Sweetener — I like to use powdered allulose sweetener. Allulose does not raise blood glucose or insulin levels. You can also use regular powdered sugar if you aren’t concerned about the sugar content!
  • Cream of tartar — stabilizes the egg whites so they hold their whip
  • Vanilla + almond extract — for flavor depth since we’re pulling back on sugar
  • Salt — a pinch, balances sweetness

  • Why is my angel food cake dense?
    • You overmixed or stirred the flour: Stirring or aggressively mixing the dry ingredients pops the trapped air bubbles. Always gently fold the flour in small additions using a large rubber spatula.
  • Why is my angel food cake gummy?
    • Under-baking: The cake needs enough time in the oven to fully set its delicate egg-white structure and evaporate excess moisture. If you remove it too soon, the interior remains wet and tacky.
    • High Humidity: Sugar is hygroscopic, meaning it naturally pulls water molecules out of the air. If your kitchen is humid or you leave the cake exposed in damp air, the surface will turn sticky.
    • Improper Cooling: Angel food cake must cool completely upside down. If you flip it too early or do not invert the pan, trapped steam condenses inside the cake, making it heavy and gummy.
    • Using a Non-Stick Pan or Grease: Angel food batter needs to grip an ungreased, bare aluminum surface to rise properly. Greasing the pan or using non-stick coatings causes the batter to slip, preventing it from drying and setting correctly as it climbs.

    • You cool an angel food cake upside down to prevent it from collapsing under its own weight while it cools and sets

Ingredients
  

Angel food cake

  • 1 1/2 cups egg white powder
  • 1 1/2 cups water
  • 3/4 cup Monk fruit or allulose powdered sugar *can sub regular powdered sugar or another fine granulated sweetener
  • 1 tsp cream of tartar
  • 1/3 cup protein powder *use a flavor you LOVE the taste of!*
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp almond extract

Toppings

  • Coconut whip topping
  • fresh berries

Instructions
 

  • Preheat oven to 350 F. Combine egg white powder, cream of tartar, and water in a the bowl of an electric mixer. Turn mixer on high and beat until stiff peaks form. This can take 15-20 minutes (egg white powder takes a much longer time to beat to stiff peaks).
  • Sift together powdered sweetener and vanilla Keto Chow. Turn mixer to low dry ingredients and extracts to the whipped egg whites. Mix on lowest setting just until incorporated and no lumps remain. Put into an ungreased angel food pan.
  • Bake for 20 mins. Cake is done when slightly golden and toothpick inserted comes out clean. I like to check the cake with a toothpick.
  • Turn pan upside down to cool completely. Use a sharp knife to cut the cake away from the sides of the pan. Push out the bottom and use the knife to cut off the bottom of the pan.
  • Serve with fresh berries and sugar free whipped cream. NOTE: I think this tastes even better after sitting in the fridge for a few hours! Keep in mind this is a healthier version – it won't be 100% exactly like the real deal but is dang close!
