What is dalgona whipped matcha?
Dalgona whipped coffee is a fun spin of the viral social media Dalgona whipped coffee! Whipped coffee goes by many names in different cultures (Frappe coffee, Beaten coffee, etc), but essentially it consists of whipping instant coffee, sugar, and water together until it creates a super frothy, cloud-like consistency.
This is a Matcha version of the popular coffee drink (great for Matcha lovers or those who don’t like coffee!). The best part about this drink, is that it’s totally customizable so you can make it to fit any dietary need or use whatever you have on hand! Whether you’re vegan, dairy-free, keto, low-sugar, or paleo, you can enjoy a whipped strawberry matcha latte!

What to use when making dalgona whipped matcha
I highly recommend using a hand mixer – it’ll make your life so much easier! This speeds up the whipping process and really creates the best, fluffiest results! Hand mixers are very inexpensive on amazon! A stand mixer will also work!
I do NOT recommend trying this with a normal whisk. You will have to whisk FOREVER and may not achieve proper results. Some people have had success using a hand-held milk frother but I have not tested this recipe using one!
Ingredients needed
- Matcha: It is important to use quality, ceremonial grade Matcha to receive it’s health benefits (not all matcha is created equal!). My favorite Matcha of all time is Pique Tea. Their matcha is smooth, not bitter, and mixes into any liquid SO well. It’s amazing for your skin health, too!
- Sugar: Any granulated sweetener will work! Sugar, monk fruit, etc.
- Egg white or Aquafaba: Aquafaba is the liquid from a can of chickpeas. It makes a great egg white substitute.
- Milk: To prepare your matcha latte!
Optional strawberry syrup:
- Fresh or frozen strawberries
- Sweetener: Sugar, monk fruit, or coconut sugar all work.
How to make Strawberry dalgona matcha
Step 1: Make the strawberry puree: Wash strawberries and remove stems. Chop into small chunks. Place chopped strawberries and sweetener in a blender or food processor and puree until smooth.
Step 2: Make the whipped matcha: Add the egg white or aquafaba to a stand mixer or to a large bowl using a hand mixer. Whip for 2-5 minutes until it’s frothy and forms stiff peaks (the aquafaba can take a bit longer). Be patient! You’ll want it to be super stiff.
Once stiff, add in the sugar while it’s beating, letting it go a few seconds to incorporate it. Do the same with the matcha, next, allowing it to fully incorporate and no chunks remain. Then turn off the mixer.
Step 3: Make your latte! Add the strawberry puree to the bottom of your glass. Then add ice and milk. Top the latte with the whipped matcha. Give it a good stir to allow all the frothiness to mix. Enjoy!

Strawberry Dalgona Matcha
Ingredients
Strawberry sauce
- 1/3 cup fresh diced strawberries
- 1 tsp monk fruit or other granulated sugar
Whipped matcha (double recipe if using stand mixer)
- 1 tsp matcha
- 1 tbsp granulated sweetener *I used monk fruit
- 1 egg white or 3 tbsp aquafaba
Latte
- milk, of choice
- Ice, as needed
- 2-3 tbsp strawberry syrup
Instructions
- Note: if using a stand mixer, you'll need to double the recipe as the 1 egg white isn't enough for the stand mixer to whip into stiff peaks.
