Let’s make some strawberry mousse!

Ingredients

  • Yogurt: You’ll want to use a THICK yogurt for this recipe. Opt for full-fat greek yogurt or coconut yogurt for a vegan option.
  • Freeze dried strawberries: Fresh or frozen strawberries will add too much liquid to this recipe (especially without having a thickening agent like gelatin).
  • Maple syrup: You can also use honey or agave.
  • Vanilla or strawberry protein powder: This is totally optional. Leave it out of using greek yogurt as it’s already high in protein.
  • Vanilla extract
  • Topping options: coconut whip, fresh strawberries, cacao nibs or chocolate chips

Equipment

steps

  • Add the freeze dried strawberries to the food processor and process a minute or two until it creates a powder.

Ingredients

Mousse

  • 1 cup Thick yogurt *greek yogurt or coconut yogurt works
  • 1 package freeze dried strawberries
  • 2 tbsp maple syrup
  • 1/2 scoop of your favorite vanilla or strawberry protein *see notes
  • 1-2 tbsp milk, as needed – omit if you're not using protein powder **See notes
  • 1/2 tsp vanilla extract

Topping ideas

  • coconut whipped cream
  • Cacao nibs
  • chocolate chips

Instructions

  • Add the freeze dried strawberries to the food processor and process a minute or two until it creates a powder.
  • Add in the remaining ingredients, blending another minute or two until super smooth. Taste the mixture & adjust as needed (more maple syrup, etc). ** If you're usig protein powder, you'll want to add in 1 tbsp of milk when you add in the other ingredients. Depending on the brands you use, you may want to add another tbsp. You want the mixture to be thick but not SUPER thick.
  • Add the mixture to your jar and top with coconut whipped cream.
  • Place in the fridge to chill for 2-3 hours. Enjoy!

Notes

*Protein is totally optional! If using greek yogurt, i’d just leave it out as it’s already high in protein. If using coconut yogurt, I like to add 1/2 scoop in.
**Use your best judgement when adding milk! Blend all of the other ingredients in first, then check the texture. It should be thick, but not sticky thick, if that make sense. You’ll want it to be thick and smooth. I like adding a tbsp!
