- Yogurt of choice – I like to use a thick yogurt (think greek or coconut yogurt)
For the crisp topping
- Rolled oats
- Almond flour or oat flour
- Pecans: chopped pecans add an amazing crunch and pairs so well with the peach but any nut will work!
- Coconut sugar
- Coconut oil: avocado or another neutral oil or butter/vegan butter can be subbed
- Pantry staples: cinnamon, sea salt, vanilla extract

- Make the crisp topping: Preheat oven to 350°F. Mix everything together in a bowl, then spread on a baking sheet. Bake for 15-20 minutes, stirring at the 10 minutes mark, until golden. Let cool completely, as it’ll firm up as it chills.
- Assemble the parfaits: Add yogurt to your cup (I actually love using these dessert cups – so cute!). Using a cheese grater, grate the peaches into shreds. Add to the top of your yogurt, then sprinkle on some crisp topping. Enjoy!

Frozen Peach Crisp (shaved peaches)
Ingredients
Crisp topping
- 1/2 cup old-fashioned rolled oats
- 1/4 cup almond flour can try subbing 3 tbsp oat flour
- 1/3 cup chopped pecans
- 3 tbsp coconut sugar or monk fruit
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- 1 tsp cinnamon & pinch sea salt
For the parfait
- 2 Peaches, frozen
- yogurt, of choice
Instructions
- Place your peaches in the freezer overnight to ensure they're completely frozen. Preheat oven to 350F.
- For the crisp topping, mix everything together in a bowl. Spread onto a baking sheet and bake for 15-20 minutes, stirring every 5 minutes or so until golden. Let cool completely before using – it'll crisp up as it chills.
- To assemble the parfaits, add some yogurt to a glass. Use a cheese grate to grate the peaches over top, then top with the crisp topping. Enjoy!
