  • Yogurt of choice – I like to use a thick yogurt (think greek or coconut yogurt)

For the crisp topping

  • Rolled oats
  • Almond flour or oat flour
  • Pecans: chopped pecans add an amazing crunch and pairs so well with the peach but any nut will work!
  • Coconut sugar
  • Coconut oil: avocado or another neutral oil or butter/vegan butter can be subbed
  • Pantry staples: cinnamon, sea salt, vanilla extract

  1. Make the crisp topping: Preheat oven to 350°F. Mix everything together in a bowl, then spread on a baking sheet. Bake for 15-20 minutes, stirring at the 10 minutes mark, until golden. Let cool completely, as it’ll firm up as it chills.

Crisp topping

  • 1/2 cup old-fashioned rolled oats
  • 1/4 cup almond flour can try subbing 3 tbsp oat flour
  • 1/3 cup chopped pecans
  • 3 tbsp coconut sugar or monk fruit
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1 tsp cinnamon & pinch sea salt

For the parfait

  • 2 Peaches, frozen
  • yogurt, of choice

Instructions
 

  • Place your peaches in the freezer overnight to ensure they're completely frozen. Preheat oven to 350F.
  • For the crisp topping, mix everything together in a bowl. Spread onto a baking sheet and bake for 15-20 minutes, stirring every 5 minutes or so until golden. Let cool completely before using – it'll crisp up as it chills.
  • To assemble the parfaits, add some yogurt to a glass. Use a cheese grate to grate the peaches over top, then top with the crisp topping. Enjoy!
