Frozen Peach Crisp (shaved peaches)

Healthy Frozen Peach Crisp — your new go-to dessert when you’re craving something sweet & secretly good for you. Frozen peaches are shaved over yogurt & topped with oaty crisp topping. It’s crispy, juicy, cinnamony (yes, that’s a word now), and just the right amount of sweet. Plus, it’s gluten-free, refined sugar-free, and takes minimal effort. Basically: peachy perfection!

Ingredients
  

Crisp topping

  • 1/2 cup old-fashioned rolled oats
  • 1/4 cup almond flour can try subbing 3 tbsp oat flour
  • 1/3 cup chopped pecans
  • 3 tbsp coconut sugar or monk fruit
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1 tsp cinnamon & pinch sea salt

For the parfait

  • 2 Peaches, frozen
  • yogurt, of choice

Instructions
 

  • Place your peaches in the freezer overnight to ensure they're completely frozen. Preheat oven to 350F.
  • For the crisp topping, mix everything together in a bowl. Spread onto a baking sheet and bake for 15-20 minutes, stirring every 5 minutes or so until golden. Let cool completely before using - it'll crisp up as it chills.
  • To assemble the parfaits, add some yogurt to a glass. Use a cheese grate to grate the peaches over top, then top with the crisp topping. Enjoy!

Tips:
  • Do I need to thaw the peaches first? Nope! They are meant to be completely frozen!
  • How do I store leftover crisp topping? Pop any leftover crisp topping in an air-tight container for up to a week.
  • Enjoy the shaved frozen peaches immediately as they'll have a sorbet-like texture and will melt if left out too long.
