Crisp topping
- 1/2 cup old-fashioned rolled oats
- 1/4 cup almond flour can try subbing 3 tbsp oat flour
- 1/3 cup chopped pecans
- 3 tbsp coconut sugar or monk fruit
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- 1 tsp cinnamon & pinch sea salt
For the parfait
- 2 Peaches, frozen
- yogurt, of choice
Place your peaches in the freezer overnight to ensure they're completely frozen. Preheat oven to 350F.
For the crisp topping, mix everything together in a bowl. Spread onto a baking sheet and bake for 15-20 minutes, stirring every 5 minutes or so until golden. Let cool completely before using - it'll crisp up as it chills.
To assemble the parfaits, add some yogurt to a glass. Use a cheese grate to grate the peaches over top, then top with the crisp topping. Enjoy!

- Do I need to thaw the peaches first? Nope! They are meant to be completely frozen!
