How to make greek roasted potatoes with whipped feta

Ingredients:

  • Feta: Both regular feta or dairy-free feta work!
  • Lemon juice
  • Olive oil
  • Baby red or gold potatoes
  • Coconut yogurt or greek yogurt
  • Spices: Garlic, salt, pepper, red pepper flakes, greek seasoning
  • Honey or sweetener: A small amount is used in the whipped feta.

Instructions:

  • Roast the potatoes: I like to soak my potatoes in cold water for 30 minutes to an hour prior to roasting them, as they get crispier! Then, drain the potatoes, pat them dry, and add them to a bowl.
  • Toss the potatoes in olive oil and spices. Lay on baking sheet and roast!
  • To make the feta, combine all of the whipped feta ingredients in a food processor, processing until smooth. Taste and adjust.
  • Plate it! Add the whipped feta to a large plate. Top with the potatoes and some fresh parsley. Serve!

Ingredients
  

Potatoes

  • 2 lb Baby red or gold potatoes
  • 2 tbsp olive oil
  • 2 tsp dried oregano
  • 1/2 tsp sea salt
  • 1/4 tsp onion powder
  • 1/2 tsp dried basil
  • 1/4 tsp pepper
  • 1/4 tsp garlic powder

Whipped Feta

  • 8 oz Feta Cheese *dairy free or regular
  • 3/4 cup Coconut yogurt or Full-fat Greek Yogurt
  • 2 tbsp olive oil
  • 1 1/2 tbsp lemon juice
  • 2 garlic cloves
  • 1 tbsp honey or sweetener of choice *Sub agave for vegan
  • pinch of red pepper flakes

Instructions
 

Roasted potatoes

  • Preheat the oven to 400F.
  • Fill a large bowl with cold water. Cut the potatoes into halves, then halves again. Place the potato wedges in the cold water, making sure they're submerged, for 30 minutes.
  • Drain the potatoes, emptying the water from the bowl. Pat them dry. Return the potatoes to the large bowl and drizzle over the olive oil and seasonings, tossing them well.
  • Spread the potatoes out on a large baking sheet, giving them space. Bake for 25 minutes. Flip the potatoes with a spatula or flip each one over. Then bake another 10 or so minutes until crispy to your liking.

Whipped Feta

  • While the potatoes are baking, make the feta.
  • Add all of the ingredients into a food processor, processing until a smooth, creamy mixture forms.
  • Taste and adjust as you'd like.
  • To serve – add the whipped feta to a plate. Top with the potatoes. Sprinkle over some fresh parsley and enjoy!
