Ingredients and substitutions

Granola: You want to use crunchy granola in this recipe. I like to use store-bought granola, but am sure to buy brands without tons of added sugar (I often keep to coconut sugar-sweetened brands like Purely Elizabeth or paleo granola). However, you can use homemade crunchy granola as well.

Almond butter: This is used to help hold the granola crust together. You can swap in any nut or seed butter!

Maple syrup: This is also used to hold the granola base together. You can also use honey.

Yogurt: Thick yogurts work best here. I opt for coconut yogurt but greek yogurt is great as well.

Toppings: Berries, chocolate chips or cacao nibs, goji berries, freeze dried fruit, hemp seeds all make great toppings.

How to make yogurt granola cups

  1. Start by adding the granola tart ingredients in a food processor. Process a few seconds until everything comes together. Press into the bottoms of a cupcake tin.
  2. Bake until golden, then let cool completely.
  3. Add some yogurt to each cup. Then add toppings. Place in the fridge until ready to eat!

How to store leftover granola cups with yogurt

I like to store the granola tarts in an air-tight container in the fridge and add yogurt when i’m ready to eat them. This will help prevent the granola tarts from becoming soggy and keep them crunchy!

Ingredients
  

Granola tart

  • 2 cups crunchy granola
  • 2 heaping tbsp almond butter *or other nut or seed butter
  • 3 tbsp maple syrup

Toppings

  • Yogurt
  • Toppings of choice

Instructions
 

  • Preheat oven to 350F. Grease a muffin tin well or use cupcake liners. I used a silicone muffin tin that makes these SO easy.
  • Add the granola tart ingredients to a food processor and process until a sticky mixture forms (30 seconds or so). It should  hold together.
  • Divide the mixture amongst the cupcake tin, slightly pressing the mixture up the sides and firmly into the bottom.
  • Bake for 14-15 minutes, or until golden around the edges. Let the pan cool a few minutes and the place in the freezer. I like doing this for 20 minutes or so as it makes them extra crunchy.
  • Add yogurt of choice (you can use a flavored yogurt, plain yogurt, mix maple syrup into your yogurt if it's not sweetened, etc) and toppings of choice Enjoy!
