How to Make the Viral Carrot Salad

1. Prep the Carrots

Peel and shred the carrots using a box grater or julienne peeler. Place them in a large mixing bowl or a jar!

2. Make the Dressing

In a small bowl, whisk together all of the dressing ingredients. You could also simply add everything to a large jar if storing you salad in it! If you want to switch things up, this would be delicious with my carrot ginger dressing (double the dose of carrot!).

3. Toss and Marinate

Pour the dressing over the carrots. Add red onion, onion, sesame seeds, and cilantro. Toss well to combine.

4. Rest and Serve

Let the salad rest in the fridge for 10–15 minutes (or even longer for best flavor) to allow flavors to meld. Taste and adjust sweetness, acidity, or saltiness as needed.

  • Use fresh, crisp carrots for the best texture.
  • Don’t skip the sesame oil! It really enhances the flavor!
  • Let the salad marinate briefly for deeper flavor (I think it’s best after 30-60 minutes).
  • Adjust sweetness and acidity to your taste! Simply taste after and adjust flavors as desired – it’s all about personal preference!

Ingredients
  

  • 2-3 carrots, shredded (i like to use a potato peeler!)
  • 1/4 red onion, sliced super thin *soak the onion in ice cold water for 10 minutes to make them less strong, if desired!
  • Protein of choice (Optional! I used cubed grilled chicken).
  • 1 tbsp sesame seeds (optional)
  • 2 tbsp cilantro, diced (optional)

Dressing

  • 1/2 tsp sesame oil
  • 1/2 tbsp soy sauce or coconut aminos
  • 1 tsp rice vinegar
  • 1/2 lime, juiced
  • 1/2-1 tsp maple syrup, honey, or liquid monk fruit drops
  • 1/8 tsp ginger powder
  • 1 garlic clove, minced
  • 1 tsp sriracha or red pepper flakes

Instructions
 

  • In a bowl, combine all of the ingredients for the dressing (alternatively, you could also just add everything to your jar if using one!).
  • In a large jar or bowl, add the shredded carrots, onion, and protein of choice.
  • Pour the dressing over top, tossing everything super well. Taste & adjust as you'd like (more sweetness, spice, etc.)
  • Top with sesame seeds and cilantro. Toss again. Let sit in the fridge for 30 minutes to allow the flavors to really come together. Enjoy!
