How to Make Paleo toasted marshmallow Coffee Syrup
Step 1: make the syrup base
Add the water & coconut sugar to a small saucepan. Heat over medium-low heat, bringing to a simmer. Stir frequently, letting it simmer for about 5 minutes until all the sugar is dissolved.
Step 2: Add the flavor!
Turn the heat to very low and add the marshmallows. Stir well until they’ve completely melted into the syrup. Then stir in the vanilla and pinch of sea salt. Whisk until smooth and glossy.
Step 3: Cool
Allow the syrup to cool for several minutes. It will continue to thicken slightly as it cools. Transfer to a glass jar or bottle and refrigerate.

- 1 cup coconut sugar *you can sub 1/2 granulated monk fruit for a lower sugar option!
- 12 Max Mallow Marshmallows (I used the burnt caramel flavor) *You can sub regular marshmallows but i'd reduce it to 8 as they're typically larger than the ones I use.
- 1 tsp vanilla bean paste or vanilla extract
- small pinch of sea salt

- Just a note: i'd consider 1-2 tbsp a "serving size"! You can always add more to a drink if you'd like!
