Toasted Marshmallow Coffee Syrup (Refined sugar-free!)

This Toasted Marshmallow Coffee Syrup is perfectly sweet, infused with nostalgic marshmallow flavor, and will transform an ordinary cup of coffee into something truly special! No refined sugar, artificial flavors, or preservatives in sight (paleo-friendly!).

Ingredients
  

  • 1 cup water
  • 1 cup coconut sugar *you can sub 1/2 granulated monk fruit for a lower sugar option!
  • 12 Max Mallow Marshmallows (I used the burnt caramel flavor) *You can sub regular marshmallows but i'd reduce it to 8 as they're typically larger than the ones I use.
  • 1 tsp vanilla bean paste or vanilla extract
  • small pinch of sea salt

Instructions
 

  • Just a note: i'd consider 1-2 tbsp a "serving size"! You can always add more to a drink if you'd like!
  • Add the water & coconut sugar to a small saucepan. Heat over medium-low heat, bringing to a simmer. Stir frequently, letting it simmer for about 5 minutes until all the sugar is dissolved.
  • Turn the heat to very low and add the marshmallows. Stir well until they’ve completely melted into the syrup. Then stir in the vanilla and pinch of sea salt. Whisk until smooth and glossy.
  • Allow the syrup to cool for several minutes. It will continue to thicken slightly as it cools. Transfer to a glass jar or bottle and refrigerate (glass is important so you can easily reheat it when using!).
  • This syrup will thicken, so before use, heat it gently in the microwave before using. Alternatively, you can store it in a mason jar, scoop some of the firmed sauce into a jar, and pour the hot espresso shots over top of it!

Notes

I used Max Mallows for this recipe! They have great ingredients, are dairy-free, and refined sugar-free. They also make a vegan version!!
  • What should i store the syrup in
    • Glass botles work best! I love buying bottles with a dispenser/pump/pour spout of sorts for easy use! 
  • Why did my syrup thicken after chilling?
    That’s completely normal. Gently warm it before serving or stir in a splash of hot water if you’d like a thinner consistency.
  • Can I use this in iced coffee?
    Absolutely! For the smoothest mixing, stir it into a small splash of warm coffee first, then add your cold brew or iced coffee.
Storage Tips:
Store the syrup in a sealed glass jar or syrup bottle in the refrigerator for up to two weeks.
Because it’s made with real ingredients and no preservatives, it may naturally thicken as it chills. Simply warm it slightly before using, or whisk in a teaspoon of warm water to return it to a pourable consistency.
