Today were making sheet pan eggs that are pretty much like a big frittata! They can be sliced into squares to enjoy alone or easily added to meal prep breakfast sandwiches or bagels!

  • Jelly roll pan / deep sheet pan – I opt for stainless steel to avoid forever chemicals. A jelly roll pan or sheet pan with higher edges is best so the eggs don’t splash around!
  • Storage container (for meal prep)

Ingredients You’ll Need

To make your Sheet Pan Baked Eggs, gather the following ingredients:

  • Eggs
  • Milk, of choice (dairy or non-dairy work!)
  • Diced vegetables (bell peppers, spinach, onions, or tomatoes work great)
  • Cheese (optional – again, dairy or non-dairy/vegan cheese both work great!)
  • Seasonings: salt and pepper to taste
  • Optional: cooked and chopped breakfast chicken sausages, turkey bacon, etc. for added protein
  • Fresh herbs for garnish (like parsley or chives)

Steps to make sheet pan eggs

1. Preheat Your Oven & prepare the eggs

Start by preheating your oven to 350°F (175°C). This ensures that your baked eggs cook evenly and become fluffy. Lightly grease a large rimmed baking sheet with cooking spray or olive oil to prevent sticking.

In a large mixing bowl, whisk together the eggs and milk until well combined. Season with salt and pepper to taste. Add Vegetables and Cheese. Fold in your diced vegetables and cheese into the egg mixture. If you’re using cooked bacon or sausage, add that as well.

2. Pour into the Sheet Pan & Bake!

Pour the egg mixture onto the prepared sheet pan/baking dish, spreading it evenly to ensure even cooking. Place the sheet pan in the preheated oven and bake for 20-25 minutes, or until the eggs are set and slightly golden on top. You can check for doneness by inserting a knife in the center; it should come out clean.

3. Cool and Slice

Once cooked, remove the sheet pan from the oven and let it cool for a few minutes. Use a sharp knife to cut the baked eggs into squares or rectangles or you can even use a circle cookie cutter to create the perfect circular egg patties for bagels.

4. Store for Meal Prep

Ingredients
  

  • 18 eggs
  • 1/2 cup unsweetened non-dairy milk or dairy milk
  • 1 1/2 tsp sea salt *more/less to suit your preferences
  • 3/4 tsp pepper *more/less to suit your preferences
  • 2 tbsp nutritional yeast (optional – adds a cheesy flavor!)
  • Other seasonings of choice: red pepper, 1/2 tsp turmeric, etc.
  • 1 1/2 cups diced, cooked or raw veggies of choice See notes

Optional additions

  • 1/2 cup cottage cheese
  • 1 cup cheese (dairy or non-dairy!)
  • fresh herbs, like basil
  • grape tomatoes, halved

Instructions
 

Note: You can 1/2 the recipe for a smaller batch!

  • Preheat oven to 350F. Spray a rimmed 18 by 13 by 1-inch baking sheet very well with non-stick cooking spray. Alternatively, you can use the same sized baking pan. If making a smaller batch, use a 9×9 pan.
  • In a large bowl, combine the eggs, milk, and seasonings. Whisk well. Then stir in your veggies. You can add in finely chopped raw veggies or warm frozen veggies in a pan and then add to the egg mixture. You can also stir in the cottage cheese or cheese shreds, if using.
  • Pour the egg mixture into your prepared baking dish.
  • Bake for 25-30 minutes until the center is set. You can check it by inserting a knife and seeing if it comes out clean/the inside is set.
  • Remove from the oven and let cool before cutting into slices.

Notes

You can use raw veggies like tomatoes, green onion, and spinach however I would recommend sautéing veggies like sliced mushrooms, bell pepper, zucchini, broccoli, asparagus, red onion, etc. I like to use the frozen PuraVida fire-roasted veggies!
