Protein Cookie Dough Bark is a frozen dessert made by pressing edible protein cookie dough into a thin layer, topping it with melted chocolate, and breaking it into bark pieces once chilled. It has the creamy texture of edible cookie dough with the satisfying snap of a chocolate bar, making it the perfect grab-and-go snack or healthier dessert! Trust me, you’ll want a stash in your freezer at all times.

Ingredients You’ll Need

This recipe comes together with just a handful of wholesome ingredients. Be sure to scroll to the recipe card at the bottom of the post for full measurements / instructions!

  • Oat flour: Homemade or store-bought! I like to grind quick oats in the blender to make it at home.
  • Protein powder: Vanilla or cookie dough works great! I’ve only tested this recipe using plant-based pea protein powder and can’t say for sure how other types of protein will work out. If you use a different kind, leave a comment below with how it worked! My favorite is Macro Mike Vanilla Buttercream protein and Wellious!
  • Maple syrup: honey or agave also works.
  • Coconut oil
  • Vanilla extract & Sea salt
  • Chocolate chips
  • Cacao nibs: these are added to the cookie dough & are packed with antioxidants, however you can use regular chocolate chips!

In a mixing bowl, combine the oat flour, protein powder, maple syrup, melted coconut oil, vanilla, and sea salt. Stir until a soft cookie dough forms. See the video for how the dough should look!

Step 2: Spread

Line a loaf pan or small baking dish with parchment paper. Press the cookie dough into an even layer about ½-inch thick.

Step 3: Add the Chocolate & freeze

Pour melted chocolate over the cookie dough and spread into an even layer. Top with flakey sea salt. Freeze for at least 2 hours or until completely firm.

Step 4: Break into Bark

Remove from the freezer and break or slice into pieces. Store in an air-tight container in the freezer. Enjoy immediately or store in the freezer.

  • Cookies & Cream: Mix in crushed chocolate sandwich cookies.
  • Birthday Cake: Add naturally colored sprinkles and vanilla protein powder.
  • Brownie Batter: Use chocolate protein powder and top with dark chocolate.
  • Salted Caramel: Drizzle with homemade caramel sauce before freezing.
  • Crunchy: Sprinkle chopped almonds, walnuts, pecans, or cacao nibs over the chocolate.

    Absolutely. Simply use certified gluten-free oat flour.

    Yes! Use your favorite dairy-free protein powder and dairy-free chocolate.
  • Can I use whey protein?
    I haven’t tested it, and whey protein tends to absorb more liquid than plant-based protein powders. You may need to add a splash of milk to achieve the right consistency.

Ingredients

  • 1/2 cup of your favorite protein powder *I used Macro Mike Vanilla Buttercream – linked in the notes!
  • 1/2 cup oat flour
  • 1/4 cup maple syrup or honey
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • pinch of sea salt
  • 1/3 cup cacao nibs or chocolate chips

  • 1 cup chocolate chips

Instructions
 

  • Mix together all of the cookie dough ingredients, folding in the cacao nibs/chocolate chips last.
  • Press the mixture into a lined cookie sheet or baking dish, about 1/2" thick.
  • In a medium bowl, add the chocolate chips. Heat in the microwave, or use the double boiler method, to melt the chocolate chips until smooth. You can add 2 tsp coconut oil to help smooth/thin it out if needed (i usually do this!). It makes the chocolate go futher.
  • Spread the chocolate over top of the cookie dough layer. Top with flakey sea salt.
  • Place in the freezer for 2-3 hours, until completely firm, before breaking or cutting into pieces.
  • Store in an air-tight container in the freezer & enjoy!
