- Brown rice cereal: Adds that irresistible crispy crunch.

- Chocolate: Dark chocolate, semi-sweet chocolate, or your favorite dairy-free chocolate all work beautifully.
- (Optional) Maple syrup or honey: Typically, if I want a lower sugar treat, I won’t add any maple syrup or honey to the peanut butter filling. However, if you’re used to a sweeter treat, you can definitely add a tablespoon or two to sweeten it up a bit!
How to Make Crunchy Date Candy Bark

Step 1: Prepare the Dates
Remove the pits from your dates and press or blend them into a sticky, cohesive mixture. Halve and pit the dates, then arrange them cut-side up in rows, slightly overlapping to create one solid layer with no gaps. Cover with parchment and gently flatten using a heavy cup or bowl.
Step 2: Add the Crunch
Gently mix the peanut butter, vanilla, salt, and brown rice cereal in a small bowl. Spread the crunchy peanut butter mixture evenly over the top of the smashed dates.
Step 3: Add the Chocolate & freeze
Melt the chocolate until smooth and pour it over the peanut butter layer. Use a spatula to spread it into an even layer. Place the bars in the freezer until the chocolate has completely set (2-3 hours). Once firm, slice into bars or break into smaller candy-sized pieces!

Ingredients
- 16ish large dates, pitted
- 1 cup brown rice cereal
- 1/2 cup runny peanut butter (smooth or crunchy!) *don't use a super thick peanut butter
- 2 tbsp maple syrup (optional!)
- 1 tsp vanilla extract (optional, but recommend!)
- pinch of sea salt (optional, but recommend!)
- 1 1/3 cups chocolate chips, of choice
Instructions
- Line a baking sheet or square pan with parchment paper. Halve and pit the dates, then arrange them cut-side up in rows, slightly overlapping to create one solid layer with no gaps. Cover with parchment and gently flatten using a heavy cup or bowl.
- Mix the peanut butter, vanilla, sea salt, and crispy rice until the cereal is well coated. Add the maple syrup/honey if using. Spread evenly over the dates, and gently smooth into an even layer.
- Melt the chocolate chips in the microwave in 30-second intervals, stirring between each, until smooth. Spread the melted chocolate over the peanut butter layer. Sprinkle with flaky salt. Then place in the freezer until firm, 2-3 hours, at least.
- Once completely firm, cut into bars and store in an air-tight container in the freezer!
