Crunchy Date Candy Bark (5 ingredients!)
Made with just 5 simple ingredients—dates, brown rice cereal, peanut butter, vanilla, and chocolate—this easy no-bake Crunchy Date Candy Bark is chewy, crunchy, chocolatey, and packed with peanut butter flavor! They're perfect for afternoon snacks, after-dinner desserts, lunchbox treats, or whenever you're craving something sweet and crunchy!

- 16ish large dates, pitted
- 1 cup brown rice cereal
- 1/2 cup runny peanut butter (smooth or crunchy!) *don't use a super thick peanut butter
- 2 tbsp maple syrup (optional!)
- 1 tsp vanilla extract (optional, but recommend!)
- pinch of sea salt (optional, but recommend!)
- 1 1/3 cups chocolate chips, of choice
Line a baking sheet or square pan with parchment paper. Halve and pit the dates, then arrange them cut-side up in rows, slightly overlapping to create one solid layer with no gaps. Cover with parchment and gently flatten using a heavy cup or bowl.
Mix the peanut butter, vanilla, sea salt, and crispy rice until the cereal is well coated. Add the maple syrup/honey if using. Spread evenly over the dates, and gently smooth into an even layer.
Melt the chocolate chips in the microwave in 30-second intervals, stirring between each, until smooth. Spread the melted chocolate over the peanut butter layer. Sprinkle with flaky salt. Then place in the freezer until firm, 2-3 hours, at least.
Once completely firm, cut into bars and store in an air-tight container in the freezer!
