Before I got into the nutrition and fitness space, I had worked as a barista for many years and have to say it was probably one of my favorite jobs i’ve had. I loved getting to chat with new people every day and the social aspect of it just really fueled me! However, I LOVED getting to come up with new drink combinations. I remember this one specific drink was SO popular – it was a white chocolate mocha with peanut butter and toasted marshmallow syrup. It was sweet and nutty and creamy.

I wanted to recreate that magical drink at home in a more wholesome way – without artificial flavors and preservatives. We are still obsessing over this one, guys! It’s made with real peanut butter for the richest flavor and homemade marshmallow fluff that’s sweetened with maple syrup and actually gut-healthy! How to make the best peanut butter latte

Ingredients

  • Peanut butter
  • Milk & cream of choice – Use a rich and creamy milk! I opted for dairy-free cashew milk and dairy-free NutPods creamer however whole milk and whole milk creamer also work if you aren’t dairy-free/vegan!
  • Marshmallow fluff – my homemade recipe is in the recipe card below! You’ll need maple syrup, grass-fed gelatin, and vanilla extract!
  • Espresso – I have left options in the recipe card and tips below if you don’t have an espresso machine! You can buy store-bought canned espresso!
  • Vanilla Extract. Vanilla adds a little extra flavor to the latte without having to add sugary syrups!
  • Sea Salt. Just a pinch enhances the nutty flavor and gives this latte a candy bar feel!
  • Sweetener: I like to use a few drops of organic monk fruit sweetener. However, you can melt granulated sugar in with your espresso shots, shake a scoop of flavored protein powder into your milk before adding it to the glass, or use a dash of maple syrup or honey. My favorite protein powder to add flavor & sweetness without extra sugar is Macro Mike. You can use my code “amb-dani” for a discount!

Steps

  • Step 1: Make the Gut-Healthy Marshmallow Fluff – In a small saucepan, sprinkle gelatin over water and let it bloom for 5 minutes. Warm the honey or maple syrup in a separate pot until it reaches a gentle simmer (about 240°F if using a thermometer). Slowly stream the warm syrup into the bloomed gelatin while whisking (or use a hand mixer) on high for 5–8 minutes until fluffy and light.
  • Step 2: Blend the Latte – combine espresso, milk, peanut butter, sweetener, vanilla, and salt. Blend until creamy and frothy. Pour into your favorite mug and then add ice.
  • Step 3: Top It Off – Dollop a generous swirl of the homemade marshmallow fluff on top or some marshmallow cold foam (recipe in recipe card!). Toast it lightly with a kitchen torch if you want to be fancy!

Tips for making a peanut butter latte

  • If you don’t have an espresso machine to brew fresh, hot shots, you can buy store-bought canned espresso and warm it up enough to melt the peanut butter into, then use!
  • Add a scoop of vanilla protein powder to turn this into a post-workout treat. Simply add to the blender with the remaining ingredients.
  • Use almond butter or cashew butter for a different nutty twist.
  • Sprinkle with cacao nibs or a dusting of cacao powder.

What at-home espresso machine is best?

I have had three at-home espresso machines now, all from different price ranges. I’ve loved all of them, but as the years have gone on, we decided to finally invest in a manual espresso machine that worked just like the ones I was used to working with in cafe’s and coffee shops. Was it expensive? hehe, yes. I kind of don’t like to think about it, BUT with how much money we spent on coffee’s out, it really does pay for itself in the end and the espresso is top notch – just like what you’d get at a coffee shop!

Ingredients
  

Marshmallow fluff

  • 1 tbsp gelatin
  • 1/2 cup water, divided
  • 1/2 cup maple syrup
  • 1 tsp vanilla extract

Assembling the latte

  • 2 espresso shots
  • 1 tbsp peanut butter
  • 1 cup Creamy milk of choice
  • 1/4 tsp vanilla extract
  • 1 tbsp Maple syrup, honey, or sweetener of choice (optional) *I used a few liquid monk fruit drops
  • pinch sea salt

Foam (can be made hot or as cold foam)

  • 1/4 cup creamer (I used NutPods creamer)
  • 2 tbsp marshmallow fluff
  • 1/4 tsp vanilla extract

Instructions
 

Marshmallow fluff

  • In the bowl of a stand mixer, add 1/4 cup of water. Then sprinkle over 1 tbsp of gelatin. Set aside to allow to bloom/thicken.
  • In a small pot, add 1/4 cup of water with 1/2 cup of maple syrup. Set the pot over medium-high heat and heat until it reaches 240 F (use a candy thermometer to check the temperature).
  • Using the whisk attachment, turn the mixer on slow. Then slowly pour the maple mixture into the stand mixer as you increase the speed to high. Whip the mixture for 3-5 minutes. It will slowly thicken and become fluffy. It's done when it resembles marshmallow fluff!
  • Spoon the fluff into a large glass container. Store in a cool dry place for up to two weeks. If you find it's gotten too thick, pop it in the microwave for 10 seconds before adding to your coffee!

Iced peanut butter latte

  • Add some peanut butter and marshmallow fluff around the glass.
  • Add peanut butter to a small bowl with the vanilla and pinch of sea salt. Then pour the espresso shots over the peanut butter. I highly recommend adding this to a blender with sweetener & a cup of milk to get it super smooth. Then pour into a glass and add ice.
  • Add cold milk to another large glass along with the 2 tbsp marshmallow fluff and vanilla. Use a hand frother to froth until thick and fluffy. Pour over top of the latte. Stir and enjoy!
  • Note: the marshmallow fluff might firm up with the ice and in the end become little chunks of marshmallow but that’s normal! If you don’t like that, leave it out or make it hot! 🙂

Hot peanut butter latte

  • I like to start with adding some peanut butter and marshmallow fluff around the glass – just makes it more fun and adds extra flavor! Warm a cup of milk in a your coffee cup. Add the peanut butter to a small bowl, along with the vanilla & sea salt. Mix the peanut butter into the espresso shots until smooth and creamy. You can add sweetener at this point if you'd like.
  • I like to pour the milk and espresso into a blender and blender, then pour into my glass. This eliminates any clumps!
  • For the foam, warm up the creamer in the microwave. Then add to a large glass. Add in 2 tbsp of marshmallow fluff. Use a hand frother to froth until super thick. Pour over top of your latte, stir, and enjoy!

Notes

Leftover marshmallow fluff can be used for so many things! Use to dip apples in, with graham crackers or cookies, etc!
*If you don’t have a stand mixer, you can use a hand mixer to make the marshmallow fluff it’ll just take a little longer so be patient!
If you don’t have an espresso machine to brew fresh, hot shots, you can buy store-bought canned espresso and warm it up enough to melt the peanut butter into, then use!
