If salted caramel is a flavor option, there’s a 99% chance i’m choosing it. I am obsessed – especially when it comes to coffee. I am not much of a sweet coffee person BUT, if there’s a salted caramel creamer? It’s in my coffee. I love a black americano with a splash of monk fruit and splash of this dairy-free salted caramel creamer – heaven.

It can be really hard to find a quality dairy-free, vegan, and paleo-friendly coffee creamer made with wholesome ingredients and no funky additives. And if you do find one, they’re typically a pretty penny. So today i’m sharing my favorite homemade coffee creamer recipe that not only takes a few minutes to make but it’s better than all the store-bought stuff! It’s ULTR creamy.. like REALLY creamy and can honestly be used as creamer on hot or iced coffees or as a decadent latte. The best part is it is super versatile and customizable!

  • Blender – I love using my beast blender for this!
  • Storage container – These glass milk container are great!


Ingredients

  • Full-fat canned coconut milk – The creamer will have a slight coconut taste to those who are sensitive to the flavor coconut. However, it’s very mild and masked by the other ingredients! You can use full-fat coconut milk for an ultra creamy texture! The canned coconut milk produces a rich & creamy texture. It’s important to use full-fat CANNED coconut milk to achieve the proper consistency, rather than lite coconut milk or coconut milk from a carton. 
  • Sweetener (optional)- a little honey, maple syrup, or monk fruit work great if you need extra sweetness! I also use these salted caramel monk fruit drops to add that caramel flavor without added sugar. If you want to make this creamer keto, skip the dates and use these!
  • Medjool Dates – pitted Medjool dates are the softest, sweetest variety in my opinion! They really give the creamer a natural sweetness and caramel flavor!
  • Vanilla extract & sea salt – don’t skip these!! This adds all the flavor to the creamer.
  • Protein powder/collagen – this is totally optional, however it’s a fun way to get extra protein into your diet and if you use a super yummy protein powder, it’ll add to the flavor and sweetness of the creamer! I love Macro Mike salted caramel protein for this!

Steps to make dairy-free coffee creamer

  • Add all ingredients to a blender and blend until smooth. Taste & adjust as you’d like. 
  • Pour into a glass container and store in the fridge.

Expert tips & FAQ

  • What if my creamer separates? Shake before using! Because this dairy-free creamer contains no preservatives or artificial ingredients, separation is natural! Just give it a good shake and then use!
  • How long does homemade creamer last? This coffee creamer is great in the fridge for up to a week!

Recipe variations

  • Add a dash of cinnamon and/or nutmeg.
  • Add 1/4 tsp almond extract for an almond coconut flavor.
  • Blend in 2-3 tbsp of raw cacao powder for a chocolate creamer.

Keto coffee creamer

This coffee creamer can easily be made keto by swapping the dates for a sugar-free substitute like monk fruit! I love these salted caramel monk fruit drops – and they’d add that caramel flavor you usually get from dates!

Ingredients
  

  • 1 can full-fat coconut milk
  • 3 medjool dates, pitted *see notes for subs
  • 1-2 tbsp maple syrup or a few monk fruit drops) *to taste
  • 1 1/4 tsp vanilla extract
  • 1/4 tsp sea salt (don't skip!)
  • 1 scoop collagen peptides OR your favorite vegan protein powder *totally optional! See notes!
  • 1/4 cup other non-dairy milk (like almond, cashew, etc) ONLY IF you want to thin it out a bit or balance the coconut flavor.

Instructions
 

  • Add all of the ingredients to a blender. Blend until smooth.
  • Taste & adjust as you'd like (more vanilla, sweetener, salt, etc.). If you find you want it thinner or to balance out the coconut, feel free to add 1/4-1/3 cup other non-dairy milk and blend again.
  • Pour the creamer into your container and store in the fridge for up to a week. Shake before use. Use in all your favorite coffees!

*Substituting dates: Keep in mind the dates are what gives the creamer it’s sweetness and caramel-like flavor. However, if you want to leave them out, add an extra tbsp or two maple syrup. You can also use salted caramel monk fruit drops – these will add caramel flavor with no sugar.
