Peanut Butter Latte

Whether you're a coffee enthusiast or peanut butter lover, this Peanut Butter Latte with marshmallow fluff is about to become your new coffee obsession! Made with real, creamy peanut butter and a homemade gut-healthy marshmallow fluff, this latte is indulgent without being over-the-top. They’re super rich, smooth, and chock full of creamy peanut butter flavor! it's paleo, refined sugar-free, and SO delicious!

Ingredients
  

Marshmallow fluff

  • 1 tbsp gelatin
  • 1/2 cup water, divided
  • 1/2 cup maple syrup
  • 1 tsp vanilla extract

Assembling the latte

  • 2 espresso shots
  • 1 tbsp peanut butter
  • 1 cup Creamy milk of choice
  • 1/4 tsp vanilla extract
  • 1 tbsp Maple syrup, honey, or sweetener of choice (optional) *I used a few liquid monk fruit drops
  • pinch sea salt

Foam (can be made hot or as cold foam)

  • 1/4 cup creamer (I used NutPods creamer)
  • 2 tbsp marshmallow fluff
  • 1/4 tsp vanilla extract

Instructions
 

Marshmallow fluff

  • In the bowl of a stand mixer, add 1/4 cup of water. Then sprinkle over 1 tbsp of gelatin. Set aside to allow to bloom/thicken.
  • In a small pot, add 1/4 cup of water with 1/2 cup of maple syrup. Set the pot over medium-high heat and heat until it reaches 240 F (use a candy thermometer to check the temperature).
  • Using the whisk attachment, turn the mixer on slow. Then slowly pour the maple mixture into the stand mixer as you increase the speed to high. Whip the mixture for 3-5 minutes. It will slowly thicken and become fluffy. It's done when it resembles marshmallow fluff!
  • Spoon the fluff into a large glass container. Store in a cool dry place for up to two weeks. If you find it's gotten too thick, pop it in the microwave for 10 seconds before adding to your coffee!

Iced peanut butter latte

  • Add some peanut butter and marshmallow fluff around the glass.
  • Add peanut butter to a small bowl with the vanilla and pinch of sea salt. Then pour the espresso shots over the peanut butter. I highly recommend adding this to a blender with sweetener & a cup of milk to get it super smooth. Then pour into a glass and add ice.
  • Add cold milk to another large glass along with the 2 tbsp marshmallow fluff and vanilla. Use a hand frother to froth until thick and fluffy. Pour over top of the latte. Stir and enjoy!
  • Note: the marshmallow fluff might firm up with the ice and in the end become little chunks of marshmallow but that’s normal! If you don’t like that, leave it out or make it hot! :)

Hot peanut butter latte

  • I like to start with adding some peanut butter and marshmallow fluff around the glass - just makes it more fun and adds extra flavor! Warm a cup of milk in a your coffee cup. Add the peanut butter to a small bowl, along with the vanilla & sea salt. Mix the peanut butter into the espresso shots until smooth and creamy. You can add sweetener at this point if you'd like.
  • I like to pour the milk and espresso into a blender and blender, then pour into my glass. This eliminates any clumps!
  • For the foam, warm up the creamer in the microwave. Then add to a large glass. Add in 2 tbsp of marshmallow fluff. Use a hand frother to froth until super thick. Pour over top of your latte, stir, and enjoy!

Notes

Leftover marshmallow fluff can be used for so many things! Use to dip apples in, with graham crackers or cookies, etc!
*If you don't have a stand mixer, you can use a hand mixer to make the marshmallow fluff it'll just take a little longer so be patient!
If you don't have an espresso machine to brew fresh, hot shots, you can buy store-bought canned espresso and warm it up enough to melt the peanut butter into, then use!
