This healthy edible protein cookie dough recipe tastes just like raw cookie dough but is nutritious, ready in 5 minutes, & makes the perfect post-workout snack or healthy dessert! It’s vegan, gluten free, refined sugar free and packed with protein! It’s great as-is, sprinkled on top of a yogurt bowl, or you can roll it into balls for cookie dough energy bites!

This edible cookie dough hits the spot – It’s perfect for a little post workout snack, after school snack or healthy dessert. You can eat it right out of the jar or roll it into little bites for a quick grab and go option!
This recipe is made without chickpeas or beans unlike other popular cookie dough recipes, as I personally can’t get past knowing there’s beans in it.. (lol!). Instead, this one is made with almond flour, collagen and protein powder, maple syrup, almond butter, and plant-based milk! And of course, lots of chocolate chips (that we measure with our hearts!). It’s moist and fluffy, just like real cookie dough, sans the raw eggs.

Ingredients you’ll need
The full recipe is in the recipe card at the bottom of the post! Here is an overview of what you’ll need:
- Collagen: You can use regular collagen or a flavored collagen like vanilla!
- Almond flour: this creates a light and fluffy texture. I find this one to be the best price! Tiger nut flour is a great nut-free option!
- Protein powder: use your favorite protein powder as it’ll add flavor/sweetness to the recipe! I love Macro Mike for sweet treats. I used the vanilla buttercream for this recipe (you can use my code “amb-dani” for a discount on any order!).
- Maple syrup: honey can also be used, just keep in mind it’ll have a slight honey flavor!
- Coconut oil: we use just 1 tablespoon!
- Nut butter: almond or cashew work best as they’re the most neutral in flavor, however you can also use peanut butter (it’ll just taste like peanut butter cookie dough!).
- Milk, of choice: I love unsweetened cashew or almond milk however any milk works!
- Vanilla extract & sea salt: Don’t skip these -they add depth and flavor!
- Chocolate chips: use your favorite brand or whatever fits your dietary needs!
Steps to make protein cookie dough
This cookie dough comes together in under 10 minutes!
Step 1: Mix the dough
Combine all the ingredients, besides the chocolate chips, until well combined. Then fold in the chocolate chips.
Step 2: Store & enjoy!
in an air-tight container in the fridge. Enjoy as is or you can roll into balls and store in an air-tight container!

Edible Protein cookie dough
Ingredients
- 1 cup runny almond or cashew butter *see notes
- 1 tbsp melted coconut oil
- 1/4 cup protein powder of choice (I use plant-based protein)
- 1/4-1/3 cup almond flour *start with 1/4 and add more as needed
- 1/2 cup collagen
- 3 tbsp maple syrup
- 1 tsp vanilla extract
- 3-4 tbsp water or milk, of choice (as needed)
- good pinch of sea salt
- chocolate chips (measure with your heart!)
Instructions
- In a bowl, combine the nut butter, protein powder, almond flour, collagen, maple syrup, vanilla, and sea salt. Add 3-4 tbsp of water or milk, as needed until you reach desired consistency. I like mine thick but moist! Taste & adjust as you'd like.
- Fold in the chocolate chips. You can add the cookie dough to an air-tight container or roll them into balls for cookie dough bites!
- Store in the fridge or freezer for long-term storage. If storing in the freezer, let thaw for 30 minutes on the counter before enjoying.
- Enjoy as is, crumbled over yogurt bowls, ice cream, etc.!
