Funny back story.. in high school, whenever my cousin and I would have boy problems or go through a break up, we’d make a batch of brownie batter and eat away our feelings. And i’m not talking edible brownie batter.. i’m talking a Duncan Hines boxed brownie mix with the egg and all.. Years later and that kind of freaks me out, so these are the next best thing!

Ingredients you’ll need
Here’s what you’ll need to make these healthy no-bake brownies (head to the recipe card at the bottom of the post for full measurements/steps):
- Medjool dates, pitted and softened
- Almond butter (or any natural nut butter): cashew butter also works great. Use granola butter or sunflower butter for a nut-free option!
- Ka’Chava Mint Chocolate All-in-One Shake
- Coconut oil, melted
- Chocolate chips (dairy-free if desired) – I love Lily’s chocolate chips for a sugar-free option.
- Sea salt
- Optional: extra sea salt flakes or mini chocolate chips for topping

- Soften the dates:
Soak the Medjool dates in warm water for 10 minutes if they’re firm, then drain. You can skip this step if your dates are already super soft/gooey! - Blend the base:
In a food processor, combine dates, almond butter, Chocolate powder, melted coconut oil, and sea salt. Blend until smooth and sticky. If your dough is dry, you can add a splash of milk (1/2-1 tbsp) at a time until the dough holds together, if needed. Be careful not to over-process or it’ll release oils. - Press and chill:
Line a loaf pan with parchment paper. Press the mixture evenly into the pan using a spatula or your hands. - Make the chocolate ganache:
Add the coconut cream to a small bowl. Heat in the microwave for 20 seconds, until hot but not boiling. Add in the chocolate chips and mint extract (if using) but do not stir. Rather, place a plate over top and let it sit for five minutes. Then remove the plate and stir until you get a glossy chocolate ganache. Pour over the brownie base. - Set and slice:
Place in the freezer for at least 2-3 hours before slicing into bars. I like to top mine with flakey sea salt. Store the bars in an air-tight container in the freezer!

Tips for Perfect No-Bake Brownies
- Use soft, sticky Medjool dates for the best texture and natural sweetness.
- Want extra crunch? Add chopped nuts or cacao nibs to the brownie dough.
- Don’t over-process! Process the dough until everything comes together (30 seconds-ish). If you over-process it, it’ll start to release oils and become oily.
- Increase the protein by adding a few scoops of collagen. This isn’t vegan, however it’s a great way to add protein without affecting the taste/texture of the brownies. I wouldn’t recommend adding more regular protein powder.

Ingredients

- 1 1/2 cups medjool dates
- 1/2 cup almond or cashew butter
- 1/3 cup cacao powder
- 2 scoops Ka'chava mint chocolate protein powder (or your favorite protein)
- 1 tbsp coconut oil, melted
- 1/2 tsp vanilla extract *optional, just adds more flavor!
- 1 tbsp milk, of choice (if/as needed)
- 1/4 tsp mint extract (if you're not using mint protein!)
Ganache
- 1/3 cup coconut cream (from a can of coconut cream or the cream from the top of a can of full-fat coconut milk)
- 1/3 cup chocolate chips
- 1/8 tsp mint extract (optional!)
- flakey sea salt, for topping
