Ingredients

Brownies

  • 1 1/2 cups medjool dates
  • 1/2 cup almond or cashew butter
  • 1/3 cup cacao powder
  • 2 scoops Ka'chava mint chocolate protein powder (or your favorite protein)
  • 1 tbsp coconut oil, melted
  • 1/2 tsp vanilla extract *optional, just adds more flavor!
  • 1 tbsp milk, of choice (if/as needed)
  • 1/4 tsp mint extract (if you're not using mint protein!)

Ganache

  • 1/3 cup coconut cream (from a can of coconut cream or the cream from the top of a can of full-fat coconut milk)
  • 1/3 cup chocolate chips
  • 1/8 tsp mint extract (optional!)
  • flakey sea salt, for topping

Instructions

  • Soften the dates: soak the Medjool dates in warm water for 10 minutes if they’re firm, then drain. You can skip this step if your dates are already super soft/gooey!
  • Blend the base: In a food processor, combine dates, almond butter, Chocolate powder, melted coconut oil, and sea salt. Prcoess until a dough forms. If your dough is dry, You can add a splash of water (1/2-1 tbsp) at a time until the dough holds together, if needed. Be careful not to over-process or it'll release oils.
  • Press and chill: Line a loaf pan with parchment paper. Press the mixture evenly into the pan using a spatula or your hands.
  • Make the chocolate ganache: Add the coconut cream to a small bowl. Heat in the microwave for 20 seconds, until hot but not boiling. Add in the chocolate chips and mint extract (if using) but do not stir. Rather, place a plate over top and let it sit for five minutes. Then remove the plate and stir until you get a glossy chocolate ganache. Pour over the brownie base.
  • Set and slice: Place in the freezer for at least 3 hours before slicing into bars. I like to top mine with flakey sea salt. Store the bars in an air-tight container in the freezer!
