Do you have to blend the cookie dough oats?

You don’t have to, but that’s what makes these extra delicious! Especially if you don’t like the typical texture of overnight oats. Blending creates a pudding-like texture that is ultra creamy and tastes like a treat!

Ingredients & substitutions

Oats – I recommend using old-fashioned oats.

Milk – Any milk will work. I usually go for cashew milk.

Cashew butter: You can also sub almond butter or sunflower seed butter for a nut-free option, however cashew butter gives the best cookie dough flavor!

Maple syrup: You can also use honey, monk fruit, etc.

Dark chocolate: This is used to make the chocolate ganache. I use this naturally sweetened chocolate from Hu Kitchen. You can use “danishealthyeats” for a discount!

Coconut yogurt: You can also sub Greek yogurt.

  1. Bend all of the oats in a blender until smooth. Pour into your glass of choice and place in the fridge overnight.
  2. Before you’re ready to eat, heat the chocolate and yogurt together until smooth. Spread it over the blended oats and place back in the freezer for 10 mins or so to firm up.
  3. Enjoy!

Ingredients
  

  • 1/2 cup oats
  • 1/2 cup milk, of choice
  • 1 tbsp maple syrup
  • 2 tbsp protein powder *optional
  • 1/2 tsp vanilla extract
  • 1 tbsp cashew butter
  • handful of cacao nibs *Optional. can sub chocolate chips

Chocolate ganache topping

  • 3 tbsp coconut yogurt
  • 1 tbsp chocolate chips

Instructions
 

  • Add all of the oat ingredients to a blender, blending until smooth. Taste and adjust as needed. Stir in the cacao nibs.
  • Pour into your glass and place in the fridge overnight
  • A little while prior to eating, melt the chocolate chips until smooth. Then stir in the yogurt. Spread this over the oats and place in the freezer for 10 minutes or so or the fridge for a bit longer.
  • Once firmed up, enjoy!
