Everything you love about a peanut butter and jelly sandwich, but in a spoonable, make-ahead jar. This PB&J chia pudding starts with a creamy peanut butter chia base, gets a layer of fruity jam, and is finished with a peanut butter magic shell that hardens into a crackly coating. It’s vegan, gluten-free, and perfect for meal prep, and it feels more like dessert than breakfast 😉

If you wake up craving something sweet, and haven’t tried chia pudding, let this be your sign to finally hoop on the train. It tastes like dessert in a jar, but it’s secretly packed with protein and fiber, which means it keeps you full and fueled well past your first meeting instead of leaving you hungry by 10 a.m. Best of all, it’s made the night before: stir, chill, and wake up to a grab-and-go breakfast that’s already done. Leaning into fall? Try this pumpkin spice latte chia pudding for a high-protein fall version!
Why You’ll Love This chia pudding
- The magic shell is the star. Just three ingredients melted together, poured over the chilled pudding, and set in just a few minutes.
- All the PB&J flavor. Peanut butter is blended right into the pudding, so every spoonful tastes like the sandwich, not just the topping.
- Make-ahead friendly. The pudding sets in the fridge overnight (or in a few hours) and the shell takes less than 5 minutes the next morning.
- Easy to adapt. Use any jam, any nut or seed butter, and any milk to fit your diet. These can be made vegan/dairy-free and sugar-free.
- Baked with protein: So you stay full all morning long!

Be sure to scroll to the recipe card at the bottom of the post for measurements and instructions!
- Chia seeds: Whole chia seeds work best for a thick, spoonable texture.
- Peanut butter: Use creamy, drippy peanut butter, ideally just peanuts and salt, so it whisks in smoothly. Stiff, no-stir styles are harder to blend.
- Protein Powder: I used plant-based protein powder, but any protein should work. You can also omit it entirely!
- Milk of choice: Any milk works. Unsweetened almond, oat, or soy milk all give good results.
- Yogurt: coconut yogurt or greek yogurt work best. Use a thick variety!
- Jam: Strawberry and grape are the classic picks. A lower-sugar jam or a quick homemade chia jam also works well.
- Coconut oil: The magic shell only hardens because coconut oil is solid when cold, so don’t swap in a liquid oil! We use just a tad!
- Sweetener of choice: honey, maple syrup, monk fruit, stevia drops, agave.. they all work!
- Vanilla extract
Tips for Success
- Blend the peanut butter and protein powder into the milk first. Adding the chia last keeps the peanut butter from clumping and gives you a smooth, even pudding.
- Stir twice. Mixing once at the start and again after 10 minutes prevents chia clumps, but this is totally optional!
- Cool the shell slightly before pouring. Hot coconut oil can melt the top layer of the pudding instead of setting into a shell.
- Pour onto cold pudding only. The shell hardens because the coconut oil firms up on contact with something chilled.

Meal Prep & Storage
Store the pudding in air-tight containers/jars in the refrigerator for up to 5 days. Make the magic shell fresh right before eating, or keep a small jar of it at room temperature and re-melt it gently as needed. A shell that’s already set will soften over time, so it’s best added at the last minute. I love using these jars for easy storage!
FAQ
Is this PB&J chia pudding vegan and gluten-free?
Yes, as written. Use plant milk, maple syrup, and a jam without gelatin or honey. For celiac disease, check the labels on your peanut butter and jam.
How do I make the magic shell harden?
Pour it over fully chilled pudding. The coconut oil firms up quickly on contact with the cold surface. If it stays soft, put the jar in the freezer for a couple of minutes.
Can I use almond butter or sunflower seed butter instead of peanut butter?
Yes, both work in the pudding and in the shell. For a peanut-free version, sunflower seed butter is the closest match.
Can I make this without coconut oil?
Coconut oil is what makes the shell harden, so there’s no good substitute. If you’d rather skip it, drizzle warmed peanut butter on top instead, though it won’t crackle.
