High Protein frozen yogurt bites

If you’re anything like us, pistachio desserts instantly feel a little extra special and and these healthy pistachio frozen yogurt bites have officially earned a permanent spot in our freezer. They’re creamy, lightly sweet, and give “better-for-you ice cream bite” vibes (basically a homemade, healthier DIBS moment). Made with simple, nourishing ingredients and naturally lower in sugar, these pistachio frozen yogurt bites are the kind of healthy, high protein dessert or snack we love reaching for when a sweet craving hits. They’re easy to make, freezer-friendly, and the perfect little treat to enjoy after meals (because yes, we fully believe lunch dessert is a thing.) Frozen yogurt cups make the perfect refreshing spring or summer treat on a hot day, however we enjoy them all year round!

We add a little protein powder to these to help create an ultra creamy (and slightly more flavorful/sweet) bite, however this is totally optional! They can be made higher protein on their own depending on the type of yogurt you use (best part, they can be made dairy-free/vegan with coconut yogurt or with your favorite greek yogurt!)

How to make frozen yogurt bites

The full recipe is at the bottom of the post in the recipe card, but here’s an overview!

Equipment

  • Mixing Bowl
  • Spatula
  • Mold: This is the mold I use! This mold is great because you can make more in one pan. You can also use a mini cupcake tin to make larger bites!

Ingredients

  • Yogurt: It’s important to use a thick yogurt, to ensure the bites come out thick and creamy. Using a thick yogurt will ensure these set up nicely as well. Thick greek yogurt or coconut yogurt both worth! Culina makes a high protein coconut yogurt that works incredibly!
  • Pistachios: I prefer to use dry roasted & salted pistachios – they add so much more flavor!
  • Maple syrup or honey: We use just a touch to sweeten the bites!
  • Protein powder: Protein powder is totally optional! I would omit it if using greek yogurt, as it’s already high in protein, but if you want to add some extra protein to a dairy-free coconut yogurt version, stirring in a scoop gets the job done!   • Sea salt & vanilla extract

Steps to make frozen yogurt bites

  • Mix together the frozen yogurt mixture: Combine the yogurt, nut butter, sweetener, optional protein, sea salt, and vanilla in a blender. Blend until smooth, thick, and creamy and no large nuts remain. A few small chunks are okay – just adds some crunch!
  • Divide it amongst your mold: Divide the yogurt mixture amongst your mold, filling each crevice about 2/3 way full.
  • Make the chocolate ganache OR melt the chocolate: You can make a chocolate ganache for a softer texture or simply top with melted chocolate for a crunchier shell.
    • For the shell, add the coconut oil and chocolate to a small bowl. You can melt the chocolate using the double-boiler method or in the microwave. Microwave in 30 second increments, stirring well between each, until completely smooth.
    • For the chocolate ganache, heat some full-fat canned coconut milk until hot, but not boiling. Pour over your chocolate chips (don’t stir yet!). Place a plate over the bowl and let it sit for 5 minute. Then mix.
  • Add a little chocolate to the top of each bite, filling that last 1/3 of each crevice.
  • Freeze! You’ll want to freeze the bites for 3-4 hours before removing them from the molds. Store in an air-tight container in the freezer.

FAQ’S, tips, & tricks

  • What yogurt makes the creamiest frozen yogurt? You’ll want to use a thick yogurt. Yogurt options with higher-fat content will create the best textured, creamiest bites. I like to use Coconut yogurt, but thick greek yogurt works great as well!
  • How long do frozen yogurt bites last? These bites will last in the freezer for a month or two! I like to leave mine out a few minutes before enjoying, as they get creamier!
  • Be patient! Make sure you leave the bites in the freezer long enough before trying to remove them from your mold. Trying to remove them before they are set will create a mess and ruin them.

Ingredients
  

Yogurt Bites

  • 1 cup greek yogurt or coconut yogurt *see notes
  • 1/3 cup dry roasted & salted Pistachios
  • 3-4 tbsp honey or maple syrup *can add more to taste
  • 1 scoop of your favorite protein powder (i used vanilla) *totally optional! Omit if you don't love your protein powder
  • 1 tsp vanilla extract
  • pinch of sea salt

Chocolate ganache coating

  • 1 cup white chocolate chips
  • 1/4 cup canned full-fat coconut milk

Instructions
 

  • In a blender, combine all of the ingredients and blend until smooth. It's okay if there's some small pistachio chunks (the best crunch!) but you want most of them to be blended up. You can taste the mixture & adjust as you'd like (more vanilla, sweetener, etc).
  • Divide the yogurt mixture amongst your mold, filling each crevice about 2/3 way full.

Chocolate topping

  • There are two options – simply melt chocolate and top the bites for a harder shell or make a 2 ingredient quick chocolate ganache for a fudgier texture.
  • For the shell, add the coconut oil and chocolate to a small bowl. You can melt the chocolate using the double-boiler method or in the microwave. Microwave in 30 second increments, stirring well between each, until completely smooth.
    For the chocolate ganache, heat the full-fat canned coconut milk until hot, but not boiling. Pour over your chocolate chips (don't stir yet!). Place a plate over the bowl and let it sit for 5 minute. Then mix.
  • Add a little chocolate to the top of each bite, filling that last 1/3 of each crevice
  • Freeze! You'll want to freeze the bites for 3-4 hours before removing them from the molds. Store in an air-tight container in the freezer for up to two months. Let the bites thaw a few minutes before enjoying for the creamiest texture.

Notes

Use a THICK yogurt that you love. The taste of the yogurt will obviously alter the taste of this recipe! Full-fat content yogurt will create the creamiest bites. 
 
I like CocoJune or Culina for coconut yogurt!
 
**You can use sunflower seed butter for a nut-free option. You can also use peanut butter but keep in mind they’ll taste like peanut butter as it’s not as neutral as the other butters – still delicious though!
