Cinnamon Streusel Dessert Pizza
Ingredients
Pizza dough
- 2 cups almond flour
- 1/4 cup tapioca flour
- 6 tbsp coconut sugar
- 6 tbsp melted coconut oil or ghee
- 1 egg room temp
- 1 tsp cinnamon
- 1 tsp vanilla extract & pinch of sea salt
Streusel filling
- 1/2 cup organic quick or old-fashioned rolled oats *See notes
- 1 tbsp cinnamon
- 5 tbsp melted coconut oil
- 1/3 cup coconut sugar
Frosting
- 1 cup cashews *soaked in hot water for 1 hour prior
- 3-4 tbsp canned coconut milk or cream *use the solid part from the top of the can
- 3 tbsp maple syrup
- 1/2 tbsp lemon juice
- 1 tsp vanilla extract
- pinch of sea salt
Instructions
- Preheat oven to 350F.
- Mix together the dough ingredients until dough forms. Place the dough on a piece of parchment paper and form it into a circle pizza crust. Build up the edges/crust around the pizza (almost like a stuffed crust/deep dish look). This will help keep the filling inside the pizza.
- Mix together the filling ingredients together until smooth. Add to the middle of the pizza crust, spreading it out evenly.
- Bake for 15-18 minutes until the edges are golden. Remove from the oven.
- To make the frosting, blend all ingredients in a blender until smooth. You want it to be thick like cream cheese frosting. Place it in the fridge to firm up while you wait for the pizza to cool a bit.
Serving
- You can either drizzle the pizza after it cools or you can warm up the slices when ready to eat and add the frosting then.
