Cinnamon Streusel Dessert Pizza

Pizza dough
- 2 cups almond flour
- 1/4 cup tapioca flour
- 6 tbsp coconut sugar
- 6 tbsp melted coconut oil or ghee
- 1 egg room temp
- 1 tsp cinnamon
- 1 tsp vanilla extract & pinch of sea salt
Streusel filling
- 1/2 cup organic quick or old-fashioned rolled oats *See notes
- 1 tbsp cinnamon
- 5 tbsp melted coconut oil
- 1/3 cup coconut sugar
Frosting
- 1 cup cashews *soaked in hot water for 1 hour prior
- 3-4 tbsp canned coconut milk or cream *use the solid part from the top of the can
- 3 tbsp maple syrup
- 1/2 tbsp lemon juice
- 1 tsp vanilla extract
- pinch of sea salt
Preheat oven to 350F.
Mix together the dough ingredients until dough forms. Place the dough on a piece of parchment paper and form it into a circle pizza crust. Build up the edges/crust around the pizza (almost like a stuffed crust/deep dish look). This will help keep the filling inside the pizza.
Mix together the filling ingredients together until smooth. Add to the middle of the pizza crust, spreading it out evenly.
Bake for 15-18 minutes until the edges are golden. Remove from the oven.
To make the frosting, blend all ingredients in a blender until smooth. You want it to be thick like cream cheese frosting. Place it in the fridge to firm up while you wait for the pizza to cool a bit.
