  • Tapioca flour: Arrowroot flour should also work!
  • Coconut flour

Ingredients
  

  • 1 cup almond flour
  • 1/2 cup tapioca starch
  • 2 tsp baking powder
  • 1/2 cup almond milk
  • 1 tsp lemon juice
  • 1/4 cup melted coconut oil or avocado oil
  • 1 egg, room temp
  • 1 tsp cinnamon
  • 1 1/4 tsp vanilla extract & good pinch sea salt
  • 1 1/2-2 tbsp monk fruit, coconut sugar, or maple syrup

Instructions
 

  • Using a large bowl, combine the almond flour, tapioca starch, cinnamon, and baking powder. Then add in the remaining ingredients, mixing until no lumps remain – careful not to over-mix.
  • Add a little batter at a time to the preheated waffle maker, cooking according to the waffle iron manufacturer's instructions. Repeat until all the batter is gone. You'll need about 1/2 cup batter per waffle. If they don't feel crispy enough for you, cook a minute or so longer (just be careful not to burn them!)
  • Top with your favorite toppings and enjoy!
