Crispy Almond Flour Waffles

- 1 cup almond flour
- 1/2 cup tapioca starch
- 2 tsp baking powder
- 1/2 cup almond milk
- 1 tsp lemon juice
- 1/4 cup melted coconut oil or avocado oil
- 1 egg, room temp
- 1 tsp cinnamon
- 1 1/4 tsp vanilla extract & good pinch sea salt
- 1 1/2-2 tbsp monk fruit, coconut sugar, or maple syrup
Using a large bowl, combine the almond flour, tapioca starch, cinnamon, and baking powder. Then add in the remaining ingredients, mixing until no lumps remain - careful not to over-mix.
Add a little batter at a time to the preheated waffle maker, cooking according to the waffle iron manufacturer's instructions. Repeat until all the batter is gone. You'll need about 1/2 cup batter per waffle. If they don't feel crispy enough for you, cook a minute or so longer (just be careful not to burn them!)
